is to do a
one-woman
show’
As she turns 84 this week, Gloria Hunniford shares why she still
loves working and how she’s helping others keep their health in check
H
aving spent the
last six decades
working in TV
and radio, Gloria
Hunniford needs little
introduction. And the
presenter, who celebrates
her 84th birthday this week,
is showing no signs of
slowing down.
She’s as driven now, in
her current roles on Loose
Women and Rip Off Britain,
as she was in her early
broadcasting days on Good
Evening Ulster in the late
70s. And she tells us it’s her
work that keeps her mind
healthy and active.
“I just want to keep my
brain ticking over,” she says.
“I’ve worked since I was
seven. I was a singer
originally and that’s what I
was going to be. Through a
record I made, I was offered
a job as a broadcaster on

BBC Belfast. I loved it and
I ended up loving it more
than I did singing.”
Gloria was the first woman
to have a daily show on
Radio 2 in 1982, which
paved the way for a host
of female presenters to
follow. And she has never
lost her passion for the
entertainment industry.
“In Northern Ireland,
you’re taught to work and
I still want to work. I’m the
oldest person on the Loose
Women team, Janet Street-
Porter being the next one
down,” she tells us. “Every
day I have to read about
somebody else. I read the
research, I get to meet new
people and I get to
interview people.
“Also, with Rip Off Britain,
I’m learning all the time
about scams and how to
manage your bills and
energy prices and
everything. It doesn’t matter
how you keep your brain
busy, but I think it’s
important as you get older
to do that.”
While many people of
Gloria’s age are enjoying
retirement, the TV legend
insists that isn’t the lifestyle
for her. “I don’t want to be
sitting at home and retired,”
she says. “I do understand
that people want to be
retired – I’m not denying
that – but for me, I still want
to work and I enjoy the
stimulation of work.”
It’s not just Gloria’s TV
work that keeps her busy.
After her daughter, presenter
Caron Keating, died of
breast cancer in 2004 at the
age of 41, Gloria embarked
on a new venture. With the

taken charge when it comes
to looking after her health.
She doesn’t smoke and says
that while she’s partial to a
glass of wine, she’d rather
have a cup of tea.
“I like a glass of wine or
champagne but I don’t drink
at home. I’m very proactive
in terms of what I do to try to
keep my health up to speed.”
She also keeps a close
eye on her blood pressure
and says, “Any time
anybody was having their

Csilla Gindorf chats about coping with Graves’ disease and how
her mushroom snack business has changed her life for the better
Csilla Gindorf, 30, from
Salisbury, created a “better

in 2022 after experiencing
intrusive thoughts when
travelling to her toxic fashion
job. Suffering from severe
burnout, anxiety and stress,
her health deteriorated so
much it triggered auto-immune
disorder Graves’ disease.
Now she tells us why it’s vital
to recognise when it’s time

though, once I got into the
working world that’s where
I’d make my adult friendships
and lasting connections
– but the turnover of staff
was insanely high.
My heart rate was
constantly high, my
metabolism rocketed, I
started to lose weight and
I was exhausted all the time.
Then in 2020, I was
diagnosed with Graves’
disease, which left me
devastated. I had hereditary
issues with my thyroid
anyway – when it’s
overactive, everything is
sped up. I’d get to 7pm and
be so incredibly shattered.
I was just burning out, tired
and overwhelmed.
Graves’ disease is an
autoimmune version of a
thyroid disease, so if it’s
overactive and autoimmune
it’s Graves’ disease and if it’s
underactive and autoimmune
it’s Hashimoto’s. Mine is the
least common one – only
1% of people have it –
and it’s triggered by stress.

My first step was to start
thyroid hormone blocking
medication, then beta
blockers to slow my heart.
But then the doctor put me on
all sorts of other prescription
medicine for anxiety and
fatigue. That’s when I
discovered mushrooms.
Most people don’t
realise mushrooms are
immunoregulatory, so
they can calm down an
overactive immune system
or boost an underactive
one. There wasn’t any sort
of immediate effect when
I tried them and I don’t ever
feel high or have any
hallucinogenic effects. But
over time I felt less anxious
and had more energy.
IT FELT LIKE A MIRACLE
I didn’t truly realise the
impact until I came off my
doctor’s medication though.
I went back for more blood
work and was surprised
when my GP said the
Graves’ disease had come
back because I’d stopped

at this point I’d been taking
the mushrooms for so long,
I didn’t even notice because
all the symptoms I’d
normally feel weren’t there
any more. My body was
able to prevent me from
feeling the fatigue and the
anxiety – I could cope much
better. It felt like a miracle.
It’s really hard to make a
positive mental health choice
when you are so close to
burnout – you can’t think
rationally which is why I
real life
launched Lucid – creating
functional mushroom and
adaptogen snack bars –
so that I, and others, don’t
have to rely on conventional
medicines to combat fatigue,
anxiety and brain fog.
The mushrooms changed
my life and I want others to
discover the potential these

People often say to me,

business.” But for me it was

Veggie peanut
noodle stir-fry
Serves 2
● 80g Tenderstem broccoli
● 80g green beans ● 1 x
garlic clove ● ½ lime ● 125g
egg noodle nest ● 25g ketjap
manis (sweet soy sauce)
● 15ml soy sauce ● 30g
peanut butter ● 1 tsp sugar

the coleslaw mix. Cook,
stirring frequently, until
slightly softened, for 2-3
minutes. Stir in the red Thai
paste and the garlic. Cook,
stirring, for 1 minute more.
5. Add the peanut sauce to
the pan and stir well until
combined. Stir through the
cooked noodles, green beans
and broccoli to coat them in
the sauce, then bring to the
boil. Simmer until slightly
thickened, for 1-2 minutes.
Once thickened, remove
from the heat. Taste and
season with salt and pepper.
Add a squeeze of lime juice
and a splash of water.
6. Share the veggie noodle
stir-fry between your bowls.
Crush the peanuts using
a rolling pin, then sprinkle
over the top. Serve with
any remaining lime cut into
wedges for squeezing over.

1. Boil a half-full kettle. Pour

the boiled water into a large
saucepan with ¼ tsp salt on
high heat. Add the rice and
cook for 12-13 minutes.
Once the rice is cooked,
drain in a sieve and pop
back in the pan. Cover with
a lid and leave to the side
until ready to serve.
2. While the rice cooks,
heat a drizzle of oil in a
large frying pan on medium-
high heat. Once hot, add
the chicken and shallot to
the pan. Fry until the chicken
is golden brown on the
outside and cooked through,
around 8-10 minutes.
3. Meanwhile, peel and
grate/press the garlic. Trim
and halve the green beans.
4. When the chicken is
cooked, add the garlic
and cook until fragrant,
for 1 minute. Add the
teriyaki sauce, sambal
paste, water for the sauce,
and half the sesame seeds.
Stir to combine.
5. Simmer until thickened
slightly, for 2-3 minutes,
then remove from the heat.
Taste and season if required.
Add a splash more water
if you feel it needs it.
6. Fluff up the rice with
a fork and share between
your two bowls. Top with
the sambal teriyaki chicken
stir-fry. Finish the dish
by scattering over the
remaining sesame seeds.

Beijing-Style Chicken Breast and Pepper Stir-Fry
Serves 2
● 150g jasmine rice ● 1 onion
● 1 bell pepper ● 260g diced
chicken breast ● 15ml ginger
puree ● 30ml miso paste
● 32ml hoisin sauce ● 25ml
ketjap manis ● 5ml black
sesame seeds ● 125ml water
for the sauce
1. Boil a full kettle. Pour the
boiled water into a large
saucepan with ¼ tsp salt on

cook for 12-13 minutes.
Drain in a sieve and pop
back into the pan. Cover
with a lid and leave to the
side until ready to serve.
2. Meanwhile, halve the bell
pepper and discard the core
and seeds. Chop into 2cm

the onion into small pieces.
3. Heat a drizzle of oil in a
large frying pan on medium-
high heat. Once hot, add the
chicken, pepper and onion
to the pan. Stir-fry for 5-6
minutes until the chicken has
browned and the vegetables
are starting to soften.
4. Add the ginger puree to
the chicken, lower the heat to
medium and fry for 1 minute.
Stir in the miso paste, hoisin
sauce, ketjap manis and
water for the sauce.
5. Bring to the boil, then
simmer gently for 3-4
minutes until the chicken
is cooked through and
the sauce has thickened.
6. When everything is ready,
share the jasmine rice out
between your serving bowls.
Spoon the Beijing-style
chicken on top. Garnish with
a sprinkle of sesame seeds.

Thai-style peanut chicken breast stir-fry
Serves 2
● 300ml water for rice
● 150g jasmine rice ● 150g
green beans ● 2 x garlic
cloves ● Drizzle of oil ● 260g
diced chicken breast ● 45g
yellow Thai-style paste ● 1 tsp
sugar ● 150ml water for sauce
● 25g ketjap manis ● 30g
peanut butter
1. Pour the water for the rice
into a saucepan with a
tight-fitting lid. Stir in the rice
and ¼ tsp salt and bring to
the boil. Once boiling, turn
the heat down to medium
and cover with the lid. Leave
to cook for 10 minutes, then
remove the pan from the
heat (still covered) and leave
to the side for 10 minutes or
until ready to serve (the rice
will continue to cook).
2. Meanwhile, trim and
halve the green beans. Peel
and grate/press the garlic.
3. Heat a drizzle of oil in a
frying pan on medium-high
heat. Once hot, add the
chicken and beans to the
pan and season. Cook until
the chicken is browned all
over and the beans have
softened, around 5-6
minutes. Turn occasionally.
4. Next, stir the garlic and
yellow Thai-style paste into
the chicken pan. Cook until
fragrant, around 1 minute.
5. While the chicken cooks,
add the sugar and water for
the sauce, ketjap manis and
peanut butter into the pan.
Stir well to combine. Bring
to the boil, then simmer until

Taste the sauce and season
with salt, pepper and a pinch
of sugar if needed. Add a
splash of water if it’s thick.
6. Divide the rice between
your bowls. Spoon over the

I’m a late starter. I’ll be

wouldn’t let go of me.
I phone to see how
Mother’s coping alone. She
claims to have moved a
poltergeist into my room.
“It was sitting there
empty,” she explains, “and
next door were running out
of space. They’d poltergeists
coming out of their ears.
You know what it’s like
with old houses.”
“I do,” I say. I do not.
Our house is a newish
build. No one’s managed
to die in it yet. Or commit
a murder. Or raise the
dead. Consequently, it’s
poltergeist-free.
“Well,” Mother continues,
“there I was, rattling round
by myself. I could hear next
door’s poltergeists raising
merry hell. So I offered to
take one off their hands.
They said, ‘Have Sandra.
All she does is sleep and
watch TV. You’ll have no
bother with her.’”
Sandra’s a permanent
fixture now. Mother has
redecorated so she feels at
home. Previously my room
was manly. Mostly blue.

than you already are.”
I should probably also
say, “I know this is hard to
hear, Mother, but perhaps
you need to let Sandra
go. I’m saying this because
I love you. I miss the way
you used to be.”
But I’m selfish. I am not
thinking about Mother. I
can’t see beyond the
poltergeist who is
monopolising my room.
I lead my mother out to
the garden where Sandra
won’t be able to hear. I sit
her down on a deck chair.
“Here’s the thing,
Mother,” I say, “with the
economy in the state it is,
I’m going to have to move
home after uni. Just for
a while. To save.
“I can’t possibly live in
the box room. I’ll need my
old room. The poltergeist
has to go.”
Mother looks at her
slippers. I haven’t seen
her in outdoor shoes all

weekend. “Sandra and
I have discussed this,” she
mumbles. “We think it’s best
if you find your own place.
Don’t worry about the
money. I’ve a good bit put
away. It’ll stretch to a flat
or a little house.”
“This is my home,” I say.
“You can’t kick me out.
Sandra’s not even family.”
Mother scuffs some moss
with her toe. “Sorry son,”
she says. “You’re young.
You’ll find your feet. Sandra
has nowhere else to go.”
“Rubbish,” I say, “Sandra
can go right back to where
she came from.”
However, it turns out
Sandra can’t. When I ask
next door to take their
poltergeist back, they
look at me like I’m mad.
“We’re not missing
any,” they say.
As if on cue, their
poltergeists begin
screeching and
banging overhead.
“What about Sandra?”
I ask.
“We’ve never had
a Sandra.”
They might be lying. If
I were them, I’d deny all
knowledge of Sandra too.
Next door says, “Sandra’s
not a poltergeist name. Are
you sure your mother’s not
