INGREDIENTS FOR BRAZIL NUT INSTRUCTIONS FOR ASSEMBLY

RICOTTA 1. Slice the zucchinis and tomatoes into 1/4-inch
1 cup Brazil nuts rounds.You'll want to end up with 48 zucchini
1 Tablespoon lime juice slices and 24 tomato slices to make 24 mini
1/8 teaspoon natural salt sandwiches.

SOME NOTES ON BRAZIL "NUTS":

* Brazil nuts are seeds. Whoever got to name them in English did them a great injustice. They
look and taste like nuts, but they are an acceptable food for anyone allergic to nuts because
they are truly seeds. Another great benefit to this oddity is that Brazil nuts do not contain
enzyme inhibitors, meaning that they are easily digestible without soaking them.

* Just one appetizer serving of the Lasagna snacks covers our estimated selenium require-
ments for several days! Brazil nuts are also a great source of calcium, magnesium, phosphorus,
copper, and manganese.

Here in Brazil it is actually illegal to cut down a Brazil nut tree! You'll sometimes see them
places; definitely not just on farms producing food for sale.
