1. Zoodles
Serves 4

with Basil
Pesto

Nutritional yeast is gluten free and packed with protein, minerals and vitamins.
This strain of yeast supports the immune system and can reduce inflammation
caused by bacteria. Its savoury, nutty, almost cheesy flavour makes it a good
cheese substitute in pasta dishes like this one.

Ingredients
– 5 small zucchinis, remove both ends
– 2 handfuls fresh basil leaves
– 2 cloves garlic
– 125 ml/ ½ cup extra-virgin olive oil
– 15 ml/ 1 tablespoon fresh lemon juice
– 60 ml/ ¼ cup nutritional yeast
– Sea salt & freshly ground black
pepper, to taste
– Big handful cherry or sundried
tomatoes, halved

1. Use a spiralizer to make the zucchini into noodles.


2. Put a tablespoon or two of the olive oil into a wok and
gently stir fry the zoodles for a few minutes on medium
heat. Be careful not to break them up.
3. To make the pesto, put the basil and garlic into a food
processor and pulse until roughly chopped. Slowly add
the olive oil in a steady stream while the processor is
running. Stop the processor and scrape down the sides
with a spatula. Add the lemon juice and nutritional yeast.
Pulse until just mixed. Season with salt and pepper.
4. Toss the zoodles and pesto together until the zoodles
are well coated. Toss in the tomatoes. Serve at room
temperature.

2. Cacao
Serves 1

Cacao nibs are basically the beans that chocolate is made from,
cut up into small pieces. You’re getting all the flavour of chocolate without the
sugar or dairy. They’re full of fibre and antioxidants, plus loads of
potassium, iron and magnesium.

Ingredients

– 1 frozen banana, peeled & cut up


– 2 fresh dates, pitted and chopped
(more if you prefer it sweeter)
– 125 ml/ ½ cup non-dairy milk
of your choice
– 15 ml/ 1 tablespoon cacao nibs
plus a few for garnish
– Few drops of vanilla extract

1. Put banana, dates,


milk substitute, cacao
and vanilla into a
blender.
2. Puree until properly
smooth.
3. Pour into a large glass
and garnish with
cacao nibs.

3. Matcha
Serves 2

Mint Nice
Cream

If you haven’t had nice cream before you’re in for a treat!
Made from frozen mashed bananas, it has the texture of ice cream but is far
healthier. It can be flavoured in many ways, from chocolate to vanilla to mint,
like this one. Peppermint doesn’t just taste good, but it helps those who have
irritable bowel syndrome and nausea.

Ingredients

– 4 frozen bananas
– Handful peppermint leaves,
finely chopped
– 30 ml/ 1 tablespoon
matcha powder
– Few drops of peppermint
essential oil
– Mint to garnish

1. Using a food processor, blend


the bananas, mint leaves
matcha powder and essential
oil together until smooth.
2. Scoop into a container and
freeze until it reaches an ice
cream consistency.
3. Serve garnished with mint
leaves
