COOKBOOK

ITALIAN STREET FOOD


Although it is recognized as one of the countries with
the finest cuisine in the world, Italy also enjoys
excellent street food. Simple and straightforward
dishes that can be found in any establishment or stall
and that delight the locals. These are recipes that arose
in humble corners, many of which were considered for
a time as peasant or working-class food, which endured
over time and are now considered classics in any
corner of Italy. Each region of the country has a unique
and distinctive cuisine, from which the variety of
simple street options does not escape, beyond pizza.

1 Arancini
Arborio or carnaroli rice, especially for risotto
200g Butter
70g White wine
100ml Vegetable or chicken broth
750ml saffron a few strands
Salt
ground black pepper
Grated Parmesan cheese
50g Chopped serrano ham
50g Fresh mozzarella in small cubes
50g Wheat flour (for breading)
Egg (for the breading)
1 Breadcrumbs (for the breading)
Plenty of vegetable oil, for frying
2 Panelle
500 gr chickpea flour
1.5 l water
20 gr of minced parsley
Salt
Frying seed oil
Pepper
3 Oliva All’Ascolana
Fat olives (half a kilo)
Minced meat, mixture of pork and beef (150 grams)
Onion (1 small)
Carrot (1 small)
Breadcrumbs or breadcrumbs
Grated Parmesan cheese
Lemon (medium skin)
Flour
White wine (half a glass)
Eggs (2)
Nutmeg
Pepper
Salt
Extra virgin olive oil
olive oil for frying

Chickpea flour 100g


Water 300ml
extra virgin olive oil 40g
salt and a pinch more 4g
Coarsely ground black pepper
Seasoning to taste: granulated garlic, oregano, grated cheese, thyme
5 Panzerotti
570 ml of lukewarm water
500 g of type 00 flour (or normal flour)
500 g Manitoba flour (or flour for making bread)
7 g (1 sachet) of active dry yeast
1 tablespoon of extra virgin olive oil
3 ½ teaspoons of salt
2 teaspoons of sugar
500 g of mozzarella
200 g tomato puree
Dried oregano
Pinch of salt
oil for frying
