Chicken Tika Burgers

For the burger:


30 ml olive oil or avo oil
Handful salad leaves
4 ciabatta rolls (lightly toasted)
1 red onion, thinly sliced

For the marinated chicken:


2 chicken breasts
125 ml Greek yogurt
40ml tikka spice mix or rub

For the tzatziki:


1 small cucumber grated
1 garlic clove crushed
125ml Greek yogurt

How to make:

1. For the chicken slice each chicken breast in half to make


four portions. Combine the yogurt and tikka spice and
rub all over the chicken. Marinate for 10 min.
2. For the tzatziki, combine everything and season.
3. For the burger preheat a griddle pan on medium-high.
Season the chicken and fry in oil for about 3 minutes per
side or until cooked.
4. Divide the salad leaves between the rolls. Add the
chicken, red onion and tzatziki. Lastly put on the top of
the bun. Enjoy!
Lamb and tzatziki boerie rolls
1 whole garlic bulb, top cut off. 5 ml ground cumin
Olive or avo oil for sprinkling. Handful of mint chopped

For the tzatziki


1 cucumber, halved lengthways
250 ml plain yogurt

For the boerie rolls


6 x 20cm lamb sausages
80g soft butter
4 crusty hot dog rolls
125 ml feta, crumbed

1. Preheat oven to 180. Place the garlic on a roasting


tray and sprinkle with oil. Season and roast for about
40 minutes, until tender. Squeeze garlic out of its skin
and cool.
2. For the tzatziki, scrape the seeds out of the cucumber
with a spoon. Grate the cucumber and squeeze out
the excess moisture. Mix in the rest of the
ingredients. Season.
3. For the boerie rolls, heat oil on medium-high and fry
the sausages, turning, for about 10 minutes, until
cooked.
4. Mix the garlic and butter together and spread inside
the rolls. Place a sausage inside each. Top with tzatziki
and feta. Enjoy!
