RICE WITH CHICKEN:

INGREDIENTS:
8 chicken pieces-
½ cup of oil.
1 medium onion diced.
3 cloves garlic minced.
½ cup fresh yellow pepper.
1 cup ground coriander.
2 peppers (1 chopped and the other in strips to decorate).
3 cups of rice.
1 cup peas.
½ cup shelled corn.
2 ½ cup of boiling water.
½ cup of beer.
Salt.
Pepper.
PREPARATION:
Wash well and dry the chicken. Seasoning and fry the chicken pieces in hot
oil until golden. Remove them.
Brown the garlic, onion, chili and coriander in the same oil. Place the chicken
pieces again, add the beer and continue cooking until the chicken is ready.
Remove again the chicken pieces.
Stir well the dressing. Add the rice, peas, corn, salt and pepper. Mix well.
Add the water, rectifying the seasoning and bring to a boil.
Lower the heat and continue cooking 20 more minutes until the rice is
cooked. Serve the rice with the hot chicken pieces and decorate with
avocado or onion salad.
