THE SOUFFLÉ PANCAKE — A much-loved French favourite, the soufflé was perfected and
popularised by Antonin Carême in the 1820s. We’ve borrowed its gravity-defying qualities and perfectly
fluffy texture for a modern twist on the iconic dessert.

THE SUZETTE ICE CREAM — Were crêpes Suzette born in Monte Carlo as a happy kitchen
accident, and named after the future King Edward VIII’s dining companion? Or were they carefully crafted
as a tribute to actress Suzanne Reichenberg in Paris? While no-one knows the truth of its origin, all agree
that it’s one of France’s greatest desserts. We’ve infused its flavours into ice cream to create a showstopping
dish.

THE FONTAINEBLEAU — Created in Fontainebleau, the town loved by French royalty, this airy
delicacy mixes fresh creamy white cheese together with whipped cream to create a mild, sweet dessert
that’s fit for a king.
