Adobong Itim, also known as "Black Adobo," is a Filipino dish made with pork or chicken cooked in

vinegar, soy sauce, garlic, and spices. Here's a basic recipe for Adobong Itim:

Ingredients:

 1 kg pork belly or chicken, cut into serving pieces

 1 head garlic, minced

 1 onion, chopped

 1 cup vinegar

 1/2 cup soy sauce

 2 bay leaves

 1 teaspoon whole peppercorns

 1 tablespoon sugar

 Cooking oil

 Salt to taste

Instructions:

1. Marinate the meat: Combine the meat, garlic, soy sauce, vinegar, bay leaves, and whole
peppercorns in a bowl. Marinate for at least 30 minutes, preferably overnight in the refrigerator.

2. Sauté: Heat some cooking oil in a pan over medium heat. Sauté the onions until translucent.

3. Add the meat: Add the marinated meat to the pan. Reserve the marinade.

4. Brown the meat: Brown the meat on all sides. This adds flavor to the dish.

5. Simmer: Pour in the reserved marinade. Add the sugar. Cover and simmer over low heat until
the meat is tender. Stir occasionally.

6. Adjust seasoning: Taste the sauce and adjust the seasoning with salt if necessary. You can also
add more soy sauce or vinegar according to your preference.

7. Reduce the sauce: Once the meat is tender, uncover the pan and let the sauce reduce until it
thickens slightly.

8. Serve: Transfer the Adobong Itim to a serving dish. Serve hot with steamed rice.

9. Garnish (optional): You can garnish with chopped green onions or fried garlic for added flavor
and presentation.
