LAB REPORT

OBJECT:
To study the freezing points of different food product.

APPARATUS DESCRIPTION:
One of the best known freezers is the contact plate freezer. It consists of a
contact freezer formed by a series of horizontally or vertically arranged plates
through which a refrigerant fluid circulates. The product to be frozen is placed
between the plates. The refrigerant evaporates inside those plates.
The Computer Controlled Contact Plate Freezer, TPCC, has been designed to
introduce the student into the quick freezing processes, to study the advantages
of these processes over other conventional freezing processes, as well as to study
the thermodynamic process involved in those freezing processes.

THEORY:
Freezing delays spoilage and keeps foods safe by preventing microorganisms from
growing and by slowing down the enzyme activity that causes food to spoil. As the
water in the food freezes into ice crystals, it becomes unavailable to those
microorganisms that need it for growth
Contact plate freezer (also called Horizontal Plate Freezer) is one kind of freezing
equipment, which is popular for shrimp, squid and minced fillet, etc. In simple
terms, a refrigeration cycle's mission is heat absorption and heat rejection. Plate
freezing is a fast freezing method, once the foodstuff is in direct contact with two
cold metallic surfaces
Compression is the first step in the refrigeration cycle, and a compressor is the
piece of equipment that increases the pressure of the working gas. Refrigerant
enters the compressor as low-pressure, low-temperature gas, and leaves the
compressor as a high-pressure, high-temperature gas.
The condenser, or condenser coil, is one of two types of heat exchangers used in a
basic refrigeration loop. This component is supplied with high-temperature high-
pressure, vaporized refrigerant coming off the compressor. The condenser
removes heat from the hot refrigerant vapor gas vapor until it condenses into a
saturated liquid state, a.k.a. condensation. After condensing, the refrigerant is a
high-pressure, low-temperature liquid, at which point it’s routed to the loop’s
expansion device.
The job of a system’s expansion device is the same - create a drop in pressure
after the refrigerant leaves the condenser.
The evaporator is the second heat exchanger in a standard refrigeration circuit,
and like the condenser, it’s named for its basic function. It serves as the “business
end” of a refrigeration cycle, given that it does what we expect air conditioning to
do – absorb heat. After doing so, the refrigerant is sent back to the compressor,
where the process restarts.

PROCEDURE:
1. Firstly, the food product (mango juice) is introduced into the Evaporator
contact plates.
2. Now attach the thermocouples (sensors) properly with food product i.e.
ST4, ST5, ST7 are attach downward side of product and ST6, ST3 are attach
upward side of product. ST8 is attached automatically to the contact plates.
3. Now turn on the TPCC device.
4. Secondly on computer first set time and adjust the fan for the compressor
at 80. Turn on the data saving mode.
5. Turn on the compressor.
6. Monitor the reading from each temperature sensor, and note in the
worksheet the temperature of the thermocouple that was inserted in the
center on the food during several period of time and record these time
periods.
7. Once the system is stable at a temperature of -18°C or less across all the
sensors in the food product, note the results.
8. The thermocouple’s freezing curve should be graphed.

RESULT:
The freezing point for the given food product (mango juice packed) is -26.9℃.
