Ingredients:

For the katsu:

 4 boneless, skinless chicken breasts or pork loin chops

 Salt and pepper, to taste

 1/2 cup all-purpose flour

 2 large eggs, beaten

 1 cup panko breadcrumbs

For the curry sauce:

 2 tablespoons vegetable oil

 1 onion, finely chopped

 2 carrots, peeled and diced

 2 potatoes, peeled and diced

 3 tablespoons curry powder (adjust to taste)

Instructions:

1. Prepare the katsu: Pound the chicken breasts or pork loin chops to an even thickness. Season
both sides with salt and pepper.

2. Set up a breading station: Place the flour, beaten eggs, and panko breadcrumbs in separate
shallow dishes.

3. Dredge each chicken breast or pork loin chop in the flour, shaking off any excess. Dip into the
beaten eggs, then coat thoroughly with panko breadcrumbs, pressing gently to adhere.

4. Heat oil in a large skillet over medium-high heat. Fry the breaded chicken or pork until golden
brown and cooked through, about 5-6 minutes per side for chicken, or 3-4 minutes per side for
pork. Transfer to a paper towel-lined plate to drain excess oil.

5. For the curry sauce: In a separate pot, heat vegetable oil over medium heat. Add the chopped
onion and cook until softened, about 3-4 minutes.
6. Add the diced carrots and potatoes to the pot and cook for another 3-4 minutes.

7. Sprinkle curry powder over the vegetables and stir to coat evenly.

8. Pour in the chicken or vegetable broth, soy sauce, and Worcestershire sauce. Stir well to
combine.

9. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered until the
