Verakadalai Urundi Siddha
Method of Preparation
1. In a saucepan, combine 1/2 cup of jaggery and 1/4 cup of water, melt the
jaggery and filter out any impurities then boil it until it thickens into a syrup.
2. Add cardamom (elachi) powder or dried ginger (sukku) powder to the syrup.
3. To check if the syrup is ready, drop a few drops into a bowl filled with water. If
you can gather it into a hard ball, it's perfect.
4. Place the roasted peanuts in a wide bowl. If you have raw peanuts, dry roast
them and remove the skin.
5. Mix the jaggery syrup and peanuts in the bowl using a spoon.
6. When the mixture is warm enough to handle, grease your hands with ghee.
7. Take a small portion in your hands and form the urundai.
8. Store the urundai in an airtight container.
