ENRIQUE’S
CHOW CHOW SALAD
(MAKES 4 SERVINGS, APPROX. 2 CUPS EACH)

TOTAL TIME: 30 MIN.


PREP TIME: 10 MIN.
COOKING TIME: 20 MIN.


12 oz. fingerling potatoes 1. Put potatoes in a large soup pot; add water to cover by 2 inches.
(approx. 8–10) Place over high heat and bring to a boil.
8 large eggs 2. When water reaches a boil, carefully add eggs, using tongs or a
spoon to lower eggs one at a time into water. Cook for 11 minutes.
2 bags (12-oz. each) trimmed green beans
3. Add green beans to boiling water; cook for 2 to 3 minutes, until
1 pint cherry tomatoes, halved

1 Tbsp. olive oil 4. While green beans cook, prepare an ice bath in a large bowl; set aside.

8. Peel and quarter eggs. Arrange eggs on top of salad, or place in
bowl and gently toss.

• Try adding ¼ cup chopped fresh parsley or dill.


• To make this into a Niçoise salad, add black olives, fresh or canned tuna, and
swap vinaigrette for lemon juice and olive oil.
• If you can't find fingerling potatoes, you can substitute 12 oz. whole new potatoes
or small red potatoes cut in halves or quarters. Cooking times for other potatoes
may vary, so they may need to be cooked separately and then added to the salad.
