Dear Editor,
Thank you for the review of my book in a recent publication of Cuisine At Home. I’m very
happy to hear that the book has a professional appearance and that the photos are well-
liked, since I was the photographer as well. I do, however, believe that Mr. Dewey’s analysis
is unfair. He complains that my book is too “complex and sophisticated” for a typical home
cook, yet the introduction I wrote in the book clearly states that the targeted market for this
book is not typical home cooks, but rather those with experience and who want to expand
their cooking abilities. I also wrote that beginners who need a little more instruction should
read my two previous books, The Basics of Cooking and Cooking Done Right.

I do not believe Mr. Dewey’s critique should be retracted, but I do hope that your magazine
will be a little fairer in future reviews by establishing guidelines. For example, you might
want to have your writers include the purpose of each book in their articles. This cookbook
of mine is no advertisement, but rather an inspiration for serious home cooks. My dream is
that anyone who enjoys cooking quality food will find this book helpful.
