Case Synopsis
Greenwich, a well-known fast-food chain specializing in pizza and pasta, opened a
branch in SM Marilao, Bulacan. This case analysis focuses on the inventory management,
material requirements planning, and just-in-time (JIT) practices implemented by Greenwich in
SM Marilao branch. The objective of this study is to examine how Greenwich effectively
manages their inventory, ensures timely delivery of fresh ingredients, and implements JIT
principles to minimize waste and optimize efficiency.

Challenges in Inventory Management. As Greenwich Pizza one on pizza-chain


restaurant, one of their problem is the storing of their product particularly to those perishable
ingredients like cheese and meats. Since they offer pizza and pasta, they use dairy products
which also have a limited shelf life. Managing inventory effectively to minimize wastage due to
spoilage or expiration requires careful monitoring of stock levels, rotation of perishable items,
and proactive ordering practices.
Greenwich Pizza can enhance operational efficiency, reduce costs, minimize waste, and
ultimately deliver a better experience to customers across its network of stores by implementing
JIT (Just In Time) practices, Greenwich pizza could receive fresh ingredients and supplies just in
time for their operations, eliminating the need for excessive storage and reducing the risk of
spoilage. In addition, it can also resolve it by doing FIFO (First In, First Out), it ensures that
older inventory is used before newer stock, reducing the risk of ingredient spoilage and
minimizing waste. Proper labeling, storage organization, and inventory rotation procedures in the
kitchen and storage areas help maintain freshness and quality.

Supply chain issue. Ensuring a steady supply of fresh ingredients, especially for
perishable items like vegetables, meats, and cheese, can be challenging. Disruptions in the
supply chain due to factors like weather events, transportation issues, or supplier problems can
affect product availability and quality. For example, during holidays or special promotions, there
may be a surge in orders for specific toppings or menu items. Predicting and preparing for these
fluctuations in demand can be challenging and may result in overstocking or understocking of
inventor, that may lead on delayed services that ruin the customer satisfaction.
