INTRODUCTION
Meat processing is a variety of methods and techniques used to convert raw materials into foodstuffs or in other forms that can be
consumed by humans. Meat processing technology requires knowledge of how to process food ingredients, especially meat so that
errors do not occur in processing, consideration of changes due to treatment in processing that affect changes that may occur in macro
components.

Meat processing technology, can be interpreted as a technology that applies knowledge about post-harvest animal/livestock origin
food ingredients in order to obtain maximum benefits so as to increase the added value of the animal/livestock origin food. In meat
processing technology, it has a broad scope, such as the physical, microbiological and chemical properties of the types of meat and
processes in processing these materials with various specializations such as processing, preservation, packaging, storage and so on.
The benefits of meat processing technology are related to the availability of food ingredients of animal origin that are available or
cultivated by humans and the human need for food ingredients, especially meat, is routine.

Fulfillment of animal protein as a need for consumption or especially on religious holidays cannot wait until the harvest season
arrives. Therefore, the technology for preserving food ingredients of animal origin, especially meat, can be sought so that animal-based
food ingredients can be stored for a long time. Preservation techniques can also be used for the distribution of food ingredients evenly
to distant places and even to various parts of the world. In addition to this, meat processing technology has also been developed to
improve quality and extend the shelf life of food of livestock/meat origin, because food of animal origin is very susceptible to spoilage
if kept at room temperature for too long. With the right technology, it can extend the shelf life of more than food of animal origin.

Animal food ingredients can be processed into food products through certain methods, for example preservation technology, smoking,
fermentation, drying and providing high or low temperatures so that food ingredients can last longer and maintain the flavor of animal
origin food ingredients, especially meat.

THE ROLE OF MEAT PROCESSING TECHNOLOGY
Meat processing technology is a chapter that studies processing techniques for meat products and their by-products so that they can contribute
to increasing the variety of various livestock food products and the productivity of livestock sector businesses. Animal food, especially meat, has
distinguishing characteristics when compared to plant-based food, including:

 When compared to vegetable food ingredients, animal food ingredients have a shorter shelf life if they are fresh, except for eggs because
food products of animal origin do not have a strong protective structure.
 External factors such as physical factors can occur, for example pressure, if animal food, especially meat, is softer so it is easily damaged
by penetration.
 Characteristics and special properties of meat differ in terms of tissue and constituent components.
 Animal food as a source of fat and protein, such as meat, is very different compared to plant food, so processing is needed to extend shelf
life, protect products from damage, improve the quality of product diversity and increase higher economic value.

To obtain quality animal products, especially meat, knowledge of livestock product processing technology is needed which can guarantee the
quality of animal products so that they are safe and healthy for consumers. It is hoped that various kinds of techniques for handling and
processing animal food ingredients can protect production results from decreasing quality and can improve or maintain the quality and
added value of animal products in terms of physical appearance, nutritional value, flavour, protection from residues and microorganisms so
that they are safer to consume.

There is a great potential for developing the application of livestock product processing technology, especially meat, because various regions
in Indonesia have unique/traditional techniques related to processing and preservation technology. Livestock product processing technology
also has the potential to open up a new business world in addition to developing local technology such as smoking meat, beef jerky, curing,
and so on.

The increase in meat prices in the international market was triggered by two causes, namely:

The influence of the environment around the global warning, and


Geopolitical economic factors in the form of eliminating subsidies in several developed countries.

Viewed from the perspective of domestic meat production, this phenomenon gives rise to two profitable short-term conditions,
namely:

1) Meat prices will rise following developments in international meat prices.


2) Domestic meat production will be increasingly taken into account, even if it is only limited to the supply that is owned..
 Meanwhile, KADIN (Chamber of Commerce and Industry) noted that every year the Indonesian people need around
350,000 to 400,000 tons of beef. This amount is equivalent to around 1.7 to 2 million beef cattle, of which around 30%
of the need is still imported from the country. other.
 Every year Indonesia's demand for beef increases, but the level of supply of beef cattle breeds continues to decline from
year to year. In addition, many of the community's productive brood cows are being slaughtered, so the decline in the
supply of beef cattle breeds is accelerating.

| MARKETING STRATEGY OF PROCESSED LIVESTOCK PRODUCTS
Marketing strategy is decision making regarding marketing costs, allocation, distribution which are related to market conditions facing competitive
conditions. Several things we need to know are related to marketing strategy :

1) Marketing management is a series of planning processes, pricing livestock processing products, promotion and distribution of goods. In the marketing
of processed livestock products, pricing must be considered, with the concept of lower prices than competitors so as to attract consumers to buy
them so that profits can still be achieved.
2) Marketing concept for livestock processing products which includes needs, consumer demand, production, satisfaction value, transactions and
marketing. It is best to determine consumers and targets so that production quantities can be determined according to the needs desired by
consumers.
3) Determining market share is by determining the target market. The thing that needs to be considered in determining market share is to calculate the
potential profit and loss of processed products from expenditure to income, it is necessary to do bookkeeping for the first year and estimate for the
second year and so on.

The more business actors there are, the tighter the competition will be, so business actors must find new marketing strategies that are effective in
competing. There are several marketing strategies that are often used, namely:

a) Price or product price should be determined at a competitive and affordable price.


b) Livestock processing products or products are offered with guaranteed quality and quality, for example in the form of fast food, chicken nuggets,
meatballs and sausages.
c) The marketing place or place should be chosen as a strategic place for product marketing, close to the target, plus social networking or an online
marketing strategy to make it easier for consumers to get the product to be sold.
d) Carrying out planned promotions through social media networks, brochures, newspapers, radio advertisements and flyers

| SUMMARY
Processed livestock products are usually located in fresh goods together with other fresh ingredients or which have been processed and require
special conditions and have a short expiration time. Fresh products are usually grouped, including: vegetables, fresh fruit, fresh meat, dairy products or dairy
products, frozen, namely frozen processed products such as sausages, frozen meat, nuggets, frozen potatoes, etc. Equipment and supplies needed in the
meat display include; showcase, frozen island, product area, shaved ice cubes, bowls, lime wedges, plastic wrap and labels.

The purpose of the display itself is to attract consumer attention and to make consumers want to own the goods presented in the shop and buy the
products being sold. This is very important to do so that goods that have a short expiration date can be sold quickly.

Marketing or marketing of livestock products is an activity carried out by business actors to promote livestock processed products or services which
cover various aspects including advertising, sales, and delivery or distribution to consumers or other companies. Various marketing strategies for livestock
products should be carried out properly with careful planning because livestock products are products that are prone to damage. The marketing strategy for
livestock products is very important, namely to achieve the goals of business actors, namely to be able to sell products as much as possible so as to make a
profit.
