Hake loin with black rice, and garlic and parsley vinaigrette.
Cod caramelized in olive oil with couliflower cream, fried bacon and cayenne oil.
Grilled turbot with vegetables in tempura, and anchovy and black olives vinaigrette.
Roasted duck breast with foie and “Pedro Ximenez” sweet wine sauce.
Veal cheek stew with foie and apple pure.
