The Ultimate Brown Butter Chocolate Chip Cookies

Crispy on the outside, chewy on the inside, and loaded with rich
chocolate chips, these chocolate chip cookies are a must-try for any
cookie monster. Easy to make and even easier to enjoy, they are an ideal
snack to serve with afternoon tea.

Ingredients
1 cup (213 grams) brown sugar
¼ cup (50 grams) white sugar
2/3 cup (151.2 grams) brown butter
1 tbsp vanilla extract
2 eggs (room temp, not cold)
¼ tsp espresso powder (optional)
1 tsp baking soda
½ tsp cornstarch
2 ¾ cup (220 grams) flour
1-2 cups (170-340 grams) of chocolate chips

Instructions
1. Start by mixing brown sugar, white sugar, and brown butter, ensuring you scoop in all the brown bits as they
have all the flavor.
2. Add vanilla extract and gently mix the ingredients until just combined.
3. Whisk in 2 room-temperature eggs and optionally add espresso powder if you want the chocolate flavor in
your cookies truly shine.
4. Add baking soda and cornstarch and mix everything for about a minute or two using a spatula to prevent
over-mixing.
5. Add flour, one cup at a time. You want your dough to be like a playdoh consistency, not too soft and not too
crumbly.
6. Finally, toss the chocolate chips of choice and gently mix with a hand to avoid over-mixing.
7. Take an ice cream scoop of any size according to your cookie size preference and scoop out cookie dough
on a baking sheet.
8. Preheat your oven to 375 degrees and bake them for eleven to twelve minutes.
9. Shape them with a cup once they are out.
