SUBJECT Procedure to clean deep fryer

Procedure On a periodic basis, deep fryer shall be cleaned and be made as


required

Prepare surrounding area


 Ensure that no food items are in the area
o Chemicals must be not in contact with food

Switch deep-fryer off


 Switch machine off by using switch on the actual unit
o Be sure deep-fryer is not switched on when empty as element
may burn out

Remove oil
 Remove oil by opening faucet and let oil pour into stainless steel
container; close faucet
 If oil is not rancid/dirty is to be reused, filter and transfer it
o Leave it switch off for around 10 minutes before empty the
oil
o Do not use plastic container as this will melt and can cause
seriouse injury

Pre-soak fryer
 Fill fryer with cold water
 Add 1 cup of oven cleaning liquid
 Switch the machine on and leave this solution to boil for around 15
minutes

Clean fryer
 Switch deep-fryer off
 While fryer is full with solution, scour with long handled brush until
clean

o Be careful not to splash the liquid

Rinse table
 Empty solution from fryer using faucet provided
 Rinse thoroughly with cold water
 Repeat procedure until thoroughly rinsed
 Close faucet
o Ensure that no trace of odour of oven cleaning chemical
remains; it is highly toxic

Tidy table
 Wipe and dry exterior surface of fryer with paper towel and warm
water
 Using dry paper towel, thoroughly dry inside of fryer
 With a damp paper towel, clean and wipe dry surroundinh area
 Use a clean mop to remove any liquid spilled on the floor
o Leave area clean and tidy
o Floors must not be left wet
