Skillet fried eggs


Jono’s chorizo, smoked matbucha, labneh, toasted sourdough
BREAKDOWN
Skillet Pan
50gr sourdough
120gr Matbucha
50gr Jonos chorizo
2 Eggs
20gr Labneh
5gr Sumac onions
2gr Flatleaf parsley

-Heat up skillet and add sauté diced chorizo and add matbucha sauce.
-Add eggs and cook gently for 5 minutes.
-To finish adding cooked labneh, sumac onions and parsley

Mathbucha
250gr capsicum peeled weight
70gr long red chili
100gr garlic bulb
300gr ripe red tomato
5gr rase el hanout
5 gr smoked paprika
10gr brown sugar
7 gr sea salt
3 gr ground white pepper
10gr lemon juice
10gr red wine vinegar
5 gr pomace olive oil

-Blanch tomatoes and peel,


-Charr peppers, cover, and peel
-Roast garlic whole
-Prepare hot skillet in woodfire and add roughly chopped tomatoes and roast
-Add garlic, chilis, lemon , sugar and spices and further roast and season
-Blend in food processor and add chopped burnt capsicum and taste for seasoning.

Sumac Onions
150g red onion
5g fine sea salt
5g white sugar
5g sumac
15g local rice vinegar
10g lime juice
-Finely slice red onions, massage with salt , sumac and sugar and allow to sit at room temp for
10 minutes.
-Add lime juice and local rice vinegar and mix well, vacuum and store in chiller for 24 hours
before use

Labneh
Greek yoghurt 500gr
Salt 7gr
-Fold salt through Greek yoghurt and pour into cheese double layered cheese cloth over strainer and bowl.
-Allow to strain over 24 hours till a soft crème cheese consistency.
