Delicious lemon cookies – cookies with lemon curd

Fine lemon cookies – cookies filled with lemon curd

Approx. 20 double biscuits (with my egg mold)

250 g flour

1 level teaspoon baking powder

125g butter

1 tsp vanilla paste

1 level teaspoon lemon zest from an organic lemon

1 egg

80 g sugar

Filling:

1 jar of lemon curd

powdered sugar

Mix the flour and baking powder. Add the butter in pieces, egg, sugar and vanilla and knead
everything together. Wrap in foil and chill for about 30 minutes.

Roll out the dough on a floured work surface to a thickness of 3 mm. Use a cookie cutter to cut
out cookies, kneading the leftover dough and then rolling and cutting out again. Place the
cookies on a baking sheet lined with baking paper and bake in a preheated oven at 200 °C (175
°C fan oven) for around 8 minutes until light brown. Remove and leave to cool on a wire rack.

Warm the lemon curd slightly. Put 1 teaspoon of lemon curd on half of the biscuits, place a
second biscuit on top and press together a little. Dust the top biscuits with powdered sugar
before placing them on the biscuits.
