Fruity Chicken

Ingredients

• 2 Tablespoons Extra-Virgin Olive Oil, 2 turns of the pan

• 2 Pounds Chicken Tenderloins

• Salt and Pepper

• 2 Tablespoons Cider or White Wine Vinegar

• 1 Pack Dried Apricot or Fruit or your choice

• 2 Cups Chicken Stock

• 1 Cup All Fruit Spread or Fruit Preserves (Fruit of your choice)

• Crushed Red Pepper to taste

• 2 Tablespoons Corn Starch

Directions

1. Heat a large skillet with a lid over medium high heat.

2. Add oil and chicken.

3. Season with salt, pepper and crushed red pepper, cook until chicken is
done.

4. Add vinegar to the pan and let it evaporate, add fruit and stock.

5. When stock comes to a bubble, add preserves and stir to combine.

6. Mix corn starch with cold water (“mix in preserve bottle and make sure to
use cold water” - Mom) add to chicken and simmer 10 to 15 minutes.
