INTRODUCTION

Lanzones are most commonly found in Southeast Asian regions and


cultivated in Malaysia, Indonesia, Thailand, the Philippines, and
Sumatra. Lanzones, a tree from the Mahogany family, are known for
their natural sweetness and tangy, sour, and set combination of edible
fruits. They are commonly found in Southeast Asian regions and can be
used in mocktails to create refreshing beverages. Lanzones can be
juicered, mixed with citrus fruits, herbs, or coconut water for a unique
flavor. Adding tropical fruits, fresh herbs, or garnishes can further
enhance the mocktail taste and appearance.

METHODS

In this study, the researchers used Descriptive and Quantitative


research design to help conduct survey questionnaire. The
population will take part in our survey after accurately determining
the variables using Quota sampling. Assembling the researchers final
result in this study, is the aroma composite mean of 3.56 as very
satisfied, taste composite means of 3.41 as very satisfied, appearance
composite mean of 3.46 as very satisfied response.

RESULT

The results showed that using lanzones as the product's main


ingredient had only partially lived up to expectations. The results
are independent of the respondent's assessment as a predicted
variable. Many respondents appreciated the unique and distinctive
flavor profile of the product, attributing it to the innovative use of
lanzones. However, some respondents expressed a desire for a
sweeter taste, suggesting that the addition of sugar and honey could
enhance the overall experience. Despite this, the product received
favorable evaluations for its visual appeal, aromatic properties,
taste, and a satisfactory rating for its description.

DISCUSSION

Based on the summary of findings, conclusion, and


recommendation, the respondents were satisfied with the lanzones
mocktail testing and identified positive benefits for the students.
However, only a small portion of the respondents claim to be in
good health. The researcher will work to increase our expertise in
conducting this study and in producing the product. All of us
researchers hope that our efforts, expertise, and study conclusion
will benefit other researchers in the future.

INTRODUCTION
PROBLEM AND ITS BACKGROUND

Lanzones or Langsat are trees from the Mahogany family, scientifically known as Lansium parasiticum. It
bears a small, tangy, sour, and set combination of edible fruits that are similar to potatoes on outer
appearance, and inside they have white flesh containing inedible, bitter seeds. Lanzones are most
commonly found in Southeast Asian regions and cultivated in Malaysia, Indonesia, Thailand, the
Philippines, and Sumatra.

The natural sweetness of lanzones makes it an excellent ingredient for mocktails, especially when
combined with other complementary flavors. Its juicy texture and slightly acidic taste can be balanced with
different ingredients like citrus fruits, herbs, or even coconut water to create a refreshing and flavorful
beverage. Many methods can be applied to create lanzones mocktails. Juicing the fruit and mixing it with
other ingredients like sparkling water, simple syrups, and citrus juices is one common techniques. This
can combine the natural sweetness of lanzones with citrus to create a bright and refreshing mocktail.
Another way to give the beverage a herbal twist is to muddle or blend lanzones with herbs like basil or
mint.

Mocktails inspired by lanzones can also be improved by adding extra flavors


and garnishes. For instance, adding tropical fruits like mango or pineapple
can enhance the flavor of the lanzones and produce a more sophisticated
tropical mocktail. Fresh herbs can improve the flavor overall and add an
earthy aroma, like rosemary or thyme. A visually appealing touch can be
added by garnishing the mocktail with lanzones segments or even a lanzones
leaf.

BACKGROUND OF THE STUDY

Based on National Nutrion Council (2022), Lanzones or Langsat are trees


from the Mahogany family, scientifically known as Lansium parasiticum. It
bears a small, tangy, sour, and sweet combination of edible fruits that are
similar to potatoes on outer appearance, and inside they have white flesh
containing inedible, bitter seeds. Lanzones are most commonly found in
Southeast Asian regions and cultivated in Malaysia, Indonesia, Thailand, the
Philippines, and Sumatra. Its larger variety is called Duku. Because of its
sweet and sour taste, some people find it similar to pomelo. Its flesh is juicy
and translucent, refreshing when eaten and among the exotic fruits. Only
freshly plucked lanzones berry tastes sweet and sour, but a few days after it’s
been picked, it loses its tastes and becomes bland.

BACKGROUND OF THE STUDY

A sensory evaluation study by Johnson Bidd (2020), Sought to determine


whether or not consumers preferred and accepted Lanzones mocktails in terms
of sensory attributes. A panel of taste testers assessed multiple Lanzone
mocktail recipes utilizing varying proportions of fruit juice, sweeteners, and
other components as part of the study. The results showed that participants
thought highly of Lanzones mocktails because of their overall appeal, flavor, and
scent. The study of linked research on mocktail lanzones emphasizes the food's
nutritional worth, anti-oxidant qualities, taste, and possible medical uses. All of

In conclusion, adding lanzones to mocktails can give the non-
alcoholic drinks a distinctive, tropical touch. When mixed with
other ingredients, the sweet and tangy flavor of lanzones can
make delightful and refreshing mocktails. Lanzones mocktails
are a great choice for any occasion, whether you’re throwing a
party, having a get-together with friends, or just searching for a
unique and tasty drink.

LOCAL LITERATURE
REVIEW OF RELATED LITERATURE

As stated by Sanglay and Macalagay (2019), This study aimed to determine the sensory evaluation and
consumer acceptability of the developed wine from lanzones fruits by a panel of 30 purposely selected
panelists from Laguna State Polytechnic University. A modified sensory evaluation score sheet anchored
on a five-point hedonic scale was used in the evaluation. The wine was produced by fermenting the
manually mashed ripe lanzones pulp using the yeast Saccharomyces cerevisiae at room temperature
(29±2 °C).
According to Danilo D. Salting (2019), This study looked at the nutritional profiles, sensory
qualities, and consumer acceptance of bakery products that were fortified with lanzones
pulp. The goal was to develop these products and assess the potential health benefits of
doing so. The results indicated that lanzones-fortified bakery products could be a novel way
to improve the nutritional value of baked goods that are frequently consumed.

Ron Lim (2022), When it comes to the province of Camiguin, lanzones are always part of the
conversation, especially since Camiguin province is known as the Lanzones Capital of the
Philippines. During their visit to Camiguin, Biyahe ni Drew looked for the different dishes that use
lanzones as an ingredient and that can only be found in Camiguin. It's not just food that can be
made from lanzones, there's also lanzones wine that travelers can drink. It has nine percent
alcohol content and is a unique drink that one can only try in Camiguin.

REVIEW OF RELATED LITERATURE

Marvin F. Gomez (2019), This study assessed the lanzones wine's sensory qualities and
consumer acceptability. The researchers examined the wine's sensory attributes, including
appearance, aroma, taste, and overall quality. The findings showed favorable consumer
acceptance, suggesting the possibility of lanzones wine being introduced as a commercial
product.

nutritional makeup. The findings indicated that they contribute significantly to the daily

among many others. During our visit, we had the chance to try langsat sake, which was actually

minerals such as potassium, calcium, magnesium, and phosphorus. These

strengthen the immune system, and prevent chronic diseases.
Using lanzones in mocktail creations can help you realize the full potential of this
delicious fruit. Adding lanzones to mocktails enhances their appearance and gives the
beverage a unique taste profile. The delicate sweetness and acidity of lanzones can
combine with other ingredients to create a well-rounded and invigorating beverage.

This study will be the Input, Process and Output in the conduct of the study.
The exploring of lanzones mocktail the ingredients will be as follows: Spakling Water,
Honey, Sugar, Lanzones Fruit.

The process of this study was composed of the assessment of the respondents on
the exploring of lanzones mocktail in terms of benefits of mocktail and the significant
difference between the assessments of the respondents.
The output of this study was the benefits of lanzones mocktail.

METHODOLOGY
Descriptive research aims to characterize the population, condition, or

Based on the collected data, the majority population’s variable, as measured by aroma, is 3.95. There are,
on average, 3.04 individuals who are satisfied with the product's chemical substance. There is a
composite mean of 3.03 respondents who are satisfied with the product's acridness. A composite mean
of 3.95 respondents says they are very satisfied with the product's freshness. A composite mean of 3.06
respondents says they are satisfied with the product of odorless. The overall average for our variable is
3.56, which indicates that respondents are very satisfied with the aroma of our product.

with the product's sweetness. A composite mean of 3.25 respondents says they are
satisfied with the product’s tanginess. The overall average for our variable is 3.41,
which indicates that respondents are very satisfied with the flavor of our product.

Based on the collected data, the majority population’s variable, as measured by appearance,
is 3.75. There are, on average, 3.65 individuals who are very satisfied with the product’s
neatness. There is a composite mean of 3.01 respondents who are also satisfied with the
product’s colorfulness. A composite mean of 3.75 respondents says they are very satisfied
with product’s creativeness. A composite mean of 3.35 respondents says they are very
satisfied with product’s translucency. The overall average for our variable is 3.46, which
indicates that respondents are very satisfied with the appearance of our product.

DISCUSSION
SUMMARY OF FINDINGS, CONCLUSION AND RECOMMENDATIONS

This chapter provides a summary and findings from the conduct of the study which also
includes information analysis of the exploring lanzones mocktail. Additionally, it offers
respondents the chance to act.
Using quota sampling, this study was selected. Both descriptive methods and quantitative
research were used.

researcher discovers that respondents are very satisfied with the
flavor of our product.

CONCLUSION

The majority of respondents, who are in stem, the researchers


discovered, indicating that they were among the respondents who were
most likely to have tried the lanzones mocktail. Many of the participants
were very satisfied with the lanzones mocktail tasting that the researchers
had done. Several respondents agreed that it appears neat and wellmade,
and the respondents identified a positive health issue while drinking the
lanzones mocktail, according to the information acquired from the
respondents surveys. The opposing majority is very satisfied.

RECOMMENDATION

Based on the presentation, analysis, and interpretation


of data in terms of aroma, taste and appearance, here are the
following recommendations made by the respondents:
• Adding fresh lanzones fruit is a great way to add natural
sweetness and flavor to make lanzones mocktail.
• The first thing all can do to improve your appearance and
make your product better is to get more water to make
balance the color of lanzones mocktail.
• The bitterness of the product must be balanced.
