Fried Milk – Leche Frita

Ingredients:

 1 Lt Whole Milk
 200gr caster sugar
 3 egg yolks
 100gr cornflour
 1 cinnamon stick
 1 lemon rind
 Bread crumbs
 Beaten Egg
 Clarified butter to fry
 Powdered Cinnamon and caster sugar for garnish

Directions:

1. In a pot place 800ml of milk with the cinnamon and lemon rind and let it reach boiling
point.
2. In a bowl big enough to hold all the boiled milk, place the rest of the milk with the
cornflour and egg yolks and sugar to mix together.
3. Once the milk has come to a boil strain onto the cornflour and egg mixture, mixing
constantly so that the egg does not split the mixture.
4. Place the contents back into the pot and bring to a gentle boil and cook for two minute.
Line a non- stick rectangular cake mould with cling film and pour in the cooked mixture.
5. Allow to set in the fridge overnight (min 12 hours)
6. Take the leche frita out of the mould and cut into two cm blocks or any desired shape
(ensure that the shape is not too big and can be handled easily with a spatula.)
7. Pass the leche frita through beaten egg and then the bread crumbs to coat is evenly you
may need to repeat this process twice.
8. Shallow fry in clarified butter getting it nice and golden brown.
9. Take them out and allow to drain on a kitchen towel.

Serve hot with a sprinkle of cinnamon and caster sugar and a scoop of ice-cream
