DEBONED SHEEP’S HEAD IN

SPICY TOMATO SAUCE


Inhloko, better known as
smileys or lip meat, is a popular
street food here in South Africa.
This recipe includes tomatoes
and basil, which offsets the fatty
meat.

Serves: 4 | Difficulty: easy | Prep time: 15 - 20 minutes | Cooking Time: 4 hours

METHOD

Spekko Long Grain Parboiled Rice to serve.


1.Chop 1 green pepper and 1 onion place in pot with bbq spice and enough water to cover the meat and
boil for 3 hours. Drain.
2.To make the sauce, heat the oil and sauté the pepper, garlic, onion and chilli until soft. Add the
chopped tomatoes.
3.Add cooked meat in to the tomato mixture and let simmer for 30 minutes.
4.Add salt and pepper to taste. Finish off with chopped basil.
5.Serve hot with Spekko Long Grain Parboiled Rice.

Spekko tips for caterers


Not everybody eat lip meat – so check before you put this on the menu.
Lip meat is very cost-effective, but choose a butcher with care. The meat must be fresh and well-cleaned
before cooking.
INGREDIENTS

To pre-cook the meat


1 green pepper, chopped
1 onion, chopped
5 ml ( 1 tsp) bbq spice
1 kg lip meat (smiley/inhloko)
water to cover

To assemble the dish


30 ml (2 tbsp) oil
1 green pepper, chopped
1 clove of garlic
1 onion, chopped
1 chilli, halved and deseeded
1 X 410 g can chopped tomatoes
salt & pepper
basil leaves for garnish
