Taco Bowl

Recipe makes 6 meals

Ingredients
1 lb 93/7 Ground Beef
1.5 C White Rice
6 oz Shredded Cheese
1 C Chunky Salsa
1/2 White Onion, chopped
15 oz can Corn, drained
1.25 oz Taco Seasoning
6 C Shredded Lettuce (1 cup

Instructions
1. Start by heating 1 Tbsp of olive oil over medium-high heat and
add 1 pound of ground beef to start browning.

2. While your beef is browning, chop up 1/2 a white onion.

3. Once your beef is cooked through, add in your chopped onion


and your drained can of corn and mix well.

4. While that's working, start on your rice. You can cook your rice in
a rice cooker or by following the instructions on the package.

5. After your beef, onions, and corn have cooked for a couple of
minutes, add in your pack of taco seasoning, 1 cup of chunky salsa,
and 1/2 cup of water. Mix well.

6. Once the liquid starts to bubble, reduce the heat to a simmer


and let it cook for 5-10 minutes. When it's done, give it a taste and
add salt and pepper to preference.

7. Once your rice is done cooking, portion everything out into your
meal containers and add 1 oz of shredded cheese to each meal.

8. Portion your shredded lettuce out into 6 small Ziplock bags or


sealable containers to add to your meals each day after reheating.
These calories and macros also include 2 Tbsp of light sour cream
to be added to each meal after reheating as well.

Notes
For even distribution of meals among meal containers, you
can either estimate the portions, or weigh the entire batch,
and divide that number by your number of meal containers.
This recipe makes six meals, so it would be the total weight,
divided by six. That will be your portion size per meal.

If storing for meal prep, place into freezer safe meal


containers, and place in the freezer for freshness. Take the
meal out of the freezer and place it in the refrigerator the
night before to let the meal thaw out.
