Other Agave Spirits
Raicilla - Mexico’s best kept secret and the rebellious cousin of mezcal and tequila.
Raicilla is a unique agave spirit produced in western Jalisco from a variety of different wild
agaves. Because Jalisco lies outside of the permitted regions for Mezcal production and
doesn’t use the Blue Weber agave it can’t be considered either Tequila or Mezcal.

Sotol - Produced from a relative of asparagus, the Desert Spoon Plant, sotol is not
technically an agave spirit. Similar to a lot of mezcal, sotol is made from the heart of the
plant, which is roasted in underground ovens.
