Explain what the difference is between primary and secondary processed food
 12 million loaves of bread eaten every day in the UK.
 Each week factory makes 1.3 million muffins, 5 million roles, 1.5 million
loaves, white and whole meal.
 420 tons of flour stored in cylos.
 Over 2 million hectares are grown every year, only planted once a year, in
august is harvest.
 10 varieties of wheat grown in the up – key to making the perfect flour
 6,000 tones some wheat
 Probes suck up a sample of the wheat and sent to a lab to see if there are
any complications.
 Over 100 different types of flour for different products
 Bran layer, endosperm and germ is combined from a grain of wheat, in
white flour is just endosperm.
 The grains, once taken apart are sieved.
 Over a tanker load of flour sieved every hour
 Flour can be combustible and must be monitored in closed environments.
 60,000 loaves made from one truck.
 Pressurize a tank to remove the flour from the truck.
 8.5k loaves made every hour
 Soya flour makes bread whiter.
 Yeast is creamed/ liquidified so it can be easier to transport, very
essential in the bread production.
 Yeast can be found in living environments, especially bark of oat trees.
 Most successful organisms on earth
 Over 4000 varieties of yeast in IFR in Norwich
 Factories of yeast all over the world
 In one tank, 30,000 kg of yeast, 1.2 million loaves can be made with that.
 Can double every 3 hours.
 Yeast must be fed sugar to multiply/ stay alive.
 Compressed into bricks to be shipped to the bread factories.
 Mixing the dough only takes 3 minutes, 20 batches an hour.
 Dough is rolled up and cut into 4, then turned 90 degrees so that the

1
structure remains strong.
 This means that when you spread butter on the bread, it wont tear or rip.
 If it wasn’t rolled up or cut into 4 it would be more susceptible to ripping
if buttered.
 Rye was used to eat in the medieval times because white bread was too
expensive.
 If you were wealthy, you could eat white bread.
 Bread is then left to prove, so that the co2 bubbles can form to help it
keep its structure, and the gluten allows the gluten helps trap the heat.
 Need to make sur no condensation happens because it may encourage
more growth.
 146 million muffins are eaten every year.
 The loaves travel through a slicing machine once done and packaged in a
high – speed bagging machine.
 The bread is then metal detected to make sure no parts of the machine
used was left in the dough.
 The bread can reach stores overnight.
 On a busy day it can be up to 1 million loaves dispatched a day.
 To help with dispatching over 30000 baskets, a voice assistant is used to
help the people working their transport wat bread to which truck so it can
be sent across the country.

Primary processed foods are foods that have been cleaned, frozen, dried, or
milled but haven’t been changed much from their original form. They’re made
safe to eat and easier to cook with. Examples include fresh fruits and
vegetables, frozen meat, and whole grains.

Secondary processed foods go through more changes. These foods take

primary processed foods and cook, bake, can, or mix them with other
ingredients to create something new and more convenient to eat. They often
have added flavors, preservatives, and other stuff to make them taste better
and last longer. Examples include bread, yogurt, canned soup, and pre-cooked
meals.
