Let me start by saying that the food industry is a very big and lucrative industry.

You would ask me why?

And that's because we must all eat & eat right? So no matter what is happening in the nation,
people must feed!

Yoghurt production is a lucrative business to invest in, be it sweetened, plain or Greek yogh. All
the types of yoghurt and its variants (Parfaits, Ice cream, Smoothies) have a huge market.

Since Yoghurt is a drink, it sells very fast like other drinks such as Coke, Malt and fruit juices.

Yoghurt is a food produced by bacterial fermentation of milk. The bacteria used in making
yoghurt are known as yoghurt cultures.

The fermentation of lactose by this bacteria produces lactic acid, which acts on milk protein to
give yoghurt it's texture and characteristic tart flavour.

So in plain terms we can say yoghurt is made from fermented milk!

Greek yoghurt is essentially the same as regular yoghurt with the addition of one critical step —
straining!

At the very end, the yoghurt is strained to remove the excess liquid known as WHEY, thereby
resulting to a thicker, more protein-dense product. So this variation of yoghurt is called "Greek
yoghurt."

Since we have learnt earlier that milk is used to make yoghurt, now what type of milk are we
talking about? Well, Animal based or plant-based milk is perfect. You can use either powdered
or liquid milk... Any would be perfect. However, for the purpose of this class, we will be using
animal-based milk e.g your Dano milk, Peak milk, 3 crown milk are all perfect options.

If you want a full-fat Greek yoghurt, you use whole milk and if you want a fat-free yoghurt, use
skimmed milk.

Other plant-based milk you can use are Almond milk, coconut milk etc.

Now, aside the milk, another major ingredient for making yoghurt is a yoghurt starter.

A *Starter* is a carefully balanced blend of bacteria which consume lactose. This blend of
bacteria converts the lactose in milk to lactic acid, giving yoghurt that classic, delicious tangy
taste...

probiotics bacteria*

your yoghurt.

So you can use sweetened/flavoured Yoghurt as Starter so long you pick your favourite flavour
and don't mind a sweet yoghurt.

And mind you, this is ONLY AN OPTION when extremely necessary.

*Unsweetened is way better.*

Starter to culture a new yoghurt so at this point you don't need to buy anymore fresh yoghurt as
active starter.

Just ensure it doesn't stay more than 7days before you use.

This process is called RECULTURING.

If you use Nono (hawked by our Hausa-fulani sisters) as your starter, your yoghurt will taste and
have same texture.

If you want your yoghurt tangier and more sour (slappy), use more quantity of starter or use
GREEK yoghurt as starter and let it stay longer.

2 measuring cups of animal based milk (or whatever milk you want to use)

1 LITRE of water

4 tablespoon of Starter

If you want a very thick Yoghurt, let it incubate for 20 hours at least.
If you want it more running, (milky yoghurt👌) leave it for 10 to 15hrs

flavoured and coloured yoghurt*

GREEK YOGHURT is made from straining the WHEY(liquid) in the regular yoghurt

SWEETENED Yoghurt has sweetener in it e.g sugar, maple syrup, date syrup, Stevia etc. You
can blend your sugar till smooth and then add or dissolve your sugar in water before adding

Add only after your yoghurt is ready.

FLAVOURED YOGHURT has flavour added e.g Vanilla, strawberry etc.

COLOURED YOGHURT is coloured by fruit extract or processed color extract.

yellow, you need to compliment with a yellow food color.

Neither would strawberry flavour turn your yoghurt to red, you need to add red or pink food
color.

1. You can mix your yoghurt with water after making it, if you feel it's too thick.

2. You can use sugar, honey, maple syrup or any sweetener of choice.

3. Make sure your milk is kept in a warm place for at least 15hours, you can put your wrapped
yoghurt in the Oven (keep the light on), an empty food cooler, cupboard, store just ensure that it
is kept warm throughout.

4. Make sure your Starter is at room temperature before you add it to your milk. So do not
refrigerate, and if you do, let it come down to room temperature before adding to the milk.
Otherwise the bacteria in the Starter won't ferment your milk.

5. Is your yoghurt slimy? This is caused by the temperature being too low. The temperature must
be appropriate (100F or warm like baby food) to get a non slimy yoghurt.

well as filling. It can also come in as snacks.It is made from quite a number of things depending
on the kind of Parfait you're making.

There are several kinds of parfait: from playing around with fruits to cookies to icecream,
buttercream etc...you can make different parfaits actually.
But for the sake of this class I would categorize it into two types of parfait.

Cake parfait is made by:

cup is full.

You can alternate different flavours for the cake parfaits like use a red velvet cake first and then
a chocolate or Cake later etc.

Parfait are a blend of yoghurt, nut, fruits, spices etc

To make a Parfait, you will need the following :

👉🏻Yoghurt (Greek Yoghurt)

👉🏻 Granola

👉🏻Additional nuts like cashew nuts, almond nuts and any other nuts of choice.

👉🏻Coconut flakes

👉🏻Syrups or any drizzle of choice

👉🏻Cup or bowl
👉🏻Spoon

👉🏻 Fruits (Citrus mix, banana, strawberry, grapes etc you can combine up to seven fruits to
make it rich)

*Method:*

👉🏻 Wash and cut the fruits into bite sizes and set aside

👉🏻 In a cup or bowl, add two tablespoon of yoghurt, then layer it with about three tables spoons
of fruits, one after the other, then yoghurt again, then like 2 tables spoons of granola, followed by
One tablespoon of coconut flakes, repeat again till the cup or bowl is filled.

👉🏻if the yogurt is unsweetened, you can sweeten with honey, date syrup before starting or you
drizzle the sweetener in between yogurt layers.

👉🏻You can also garnish with coconut flakes, fruits of choice

👉🏻Keep refrigerated if the yoghurt and the fruits are not already chilled

It's ready to be eaten.

It can be served as a snack at home or dessert at functions

Doing these will eat into your business. If You can make these things yourself and also get other
ingredients in your local big Markets then you would be able to maximize profit.

❌Selling wack Parfait; Some persons don't know how to deliver quality parfait. some sell a day
old parfait or days old parfait. Parfaits are best when made fresh.

❌ Selling parfait that is soggy and the fruits and nuts are not crunchy.

❌ Not measuring the ingredients properly for the parfait making to ensure consistency and also
minimize loss.

Averagely a cup of 350ml parfait cost between 1500-2000naira depending on your location.

members for tasting. Package it well o...market has started nah😉
