Meringue Nut Roll
Dough
1/2 lb. Sweet Butter (two sticks)
1 Tbls. Sugar
1 Cake Yeast (2 ½ Tbls.)
½ Cup Milk
3 Egg Yolks
3 Cups Flour (Sifted)
½ Tsp Salt
Meringue
3 Egg Whites
¾ Cup Sugar
1 Cup Crushed Nuts (Walnuts)
Cream Butter and 1 tbls. sugar, add egg yolks which were well beaten Dissolve the
yeast in a little warm milk and add to the mixture. Add half of the flour and salt mix well,
add the remainder of the milk and flour alternately
Chill batter at least 12 Hours.
Cut dough in 2 pieces and roll each to about ¼ or ½ inch thickness on lightly flowered
wax paper. Beat Egg whites until stiff with ¾ cup of Sugar. Spread Meringue over the
sheets of Dough cover with Nuts and roll
Place in greased pan (end wrap down) and bake in moderate oven 375 for about 30
minutes.
