classic recipe for Chicken Tikka Masala, a popular Indian non-vegetarian dish:

Ingredients:

For Marination:

 500g boneless chicken, cut into bite-sized pieces


 1 cup yogurt
 1 tablespoon ginger-garlic paste
 1 teaspoon red chili powder
 1 teaspoon turmeric powder
 1 teaspoon ground cumin
 1 teaspoon ground coriander
 Salt to taste
 2 tablespoons lemon juice
 2 tablespoons vegetable oil

For the Sauce:

 2 tablespoons vegetable oil


 2 onions, finely chopped
 2 tomatoes, pureed
 1 tablespoon ginger-garlic paste
 1 teaspoon red chili powder (adjust to taste)
 1 teaspoon ground cumin
 1 teaspoon ground coriander
 1 teaspoon garam masala
 1/2 cup heavy cream
 Salt to taste
 Fresh coriander leaves for garnish

Instructions:

1. In a large bowl, mix together yogurt, ginger-garlic paste, red chili powder, turmeric
powder, ground cumin, ground coriander, salt, lemon juice, and vegetable oil. Add the
chicken pieces and coat them well with the marinade. Cover and refrigerate for at
least 1 hour, preferably overnight.
2. Preheat the oven to 200°C (400°F). Thread the marinated chicken pieces onto skewers
and place them on a baking tray lined with aluminum foil. Bake for 20-25 minutes or
until the chicken is cooked through and slightly charred around the edges. You can
also grill the chicken skewers on a barbecue.
3. While the chicken is cooking, heat 2 tablespoons of vegetable oil in a large pan over
medium heat. Add the chopped onions and sauté until they turn golden brown.
4. Add ginger-garlic paste and sauté for another minute until fragrant. Then add the
tomato puree, red chili powder, ground cumin, ground coriander, garam masala, and
salt. Cook the mixture until the oil starts to separate from the spices.
5. Stir in the heavy cream and let the sauce simmer for 5-7 minutes until it thickens
slightly.
6. Once the chicken is cooked, remove it from the skewers and add it to the sauce. Mix
well to coat the chicken pieces with the sauce.
7. Garnish with fresh coriander leaves and serve hot with naan, rice, or roti.
