1.- PÎZZAS and MASSES

Bran pizza (Dukan, PP)

MASS:
40 gr. oat bran (2 CS)
5 gr. wheat bran (1 CS)
10g. skimmed milk powder (1 CS)
2 egg whites
45 gr. 0% fresh whipped cheese
1 teaspoon of yeast coffee
a pinch of salt
*STUFFED:
Crushed natural tomato (or fried dukan)
Oregano
Light grated cheese
Sweet ham, tuna
a little onion

1.- Put all the dough ingredients in the glass for 15 SEC. - SPEED5
2.- Pour into a dish suitable for the oven and put in the microwave for 5 MIN. at maximum
power
3.- Cook the onion with a little water in a bowl in the microwave until it is transparent.
4.- Take the base out of the oven, put crushed tomato or Dukan fried tomato on top, the
onion, the sweet ham, the tuna, the cheese and the oregano (or even an egg, use your
imagination) and bake in the oven until that it is done.

PANCAKES (Pancakes, luckye recipe)

1 egg and a white


1 natural yogurt (in my case soy)
2 ct cornstarch (15g)
2 ct liquid sweetener
1 ct royal
lemon or vanilla essence

We put everything on V 3 for a few seconds and let it rest for 1/2 hour. Then we make the
pancakes in a non-stick pan.
(You have to use a good pan, add a drop of oil and clean it with a paper, then you pour the
dough into the pan little by little until it is the size you want (it is better to make them small so
that they do not break when you hit them). turn it over) you leave it for a minute and you see
that bubbles form on the top, that's when you turn it over with a slotted spoon, you leave it for
another minute and that's it, it's very easy. It is also important to let the dough rest for the
indicated half hour. )
2.- CREAMS, SOUPS AND SAUCES

Broth Cubes

(For 1 1/2 kg)


500 g of lean meat in small pieces (chicken, beef, turkey)
500 g of various vegetables (celery, carrots, onions, leeks, etc.)
300 gr of coarse salt

Pour half of the meat into the glass and blend for 10 seconds at speed 8, pour the meat into a
container and set aside. Repeat the operation with the other half.
Next, pour all the vegetables into the glass and blend for 10 seconds at speed 6.
Next, add the meat and salt and program for 30 minutes, temperature 100º, speed 5. Let it
cool in the glass and then blend at speeds 6-10. If it is too thick, you can add a little white wine.
Pour into an ice cube tray and store in the freezer.
It's a great idea for stews and roasts in the oven! Bon appetite!!

Carrot cream:
500g carrots
180 g onion
5 g fresh ginger (optional)
1 skimmed yogurt
60 cl of ideal evaporated milk
1 chicken fillet.

1. Put the carrots, the onions cut into pieces and the peeled ginger root in the glass. Chop
for 4 seconds at speed 5.
2. Add the water and salt and program 25 minutes, temperature 100º, speed 1.
3. Blend 1 minute, speed 5-10
4. Add the yogurt and Ideal milk, mix 15 second speed.
5. Sprinkle with a little parsley and that's it.

Ketchup
1 can of natural tomatoes of 400 gr. or fresh tomato cleaned of seeds.
1 small onion
1/2 vegetable broth cube
Oregano or basil or mint (according to taste)

Chop the onion for 4 seconds, speed 5.


Add the tomato, 1/2 stock cube, oregano/mint/basil and cook at 100º, 20 minutes. If the
tomato is natural, 30 minutes. If it is very liquid, cook for more minutes.
At the end of cooking, let it cool (maximum 70º) and blend to taste.

Fish soup for mixdukanian©s

TO. Shrimp smoke (for 1.2 liters)


500 g rice shrimp
1200 cl of water
1. Wash and clean the shrimp, separating the shells from the body of the shrimp (reserve).
2. Add the water and shrimp shells to the glass. If you are in the cruise phase on the S/S day,
you can add to this smoked onion, carrot, leek, garlic... (to taste). Program 30 minutes, 100º
and speed 1. Strain and reserve.
Tip: You can freeze this smoke by making cubes and using it when you need it in other
recipes...
b. Fish soup
500 g mussels
200 g of chirlas
200 g squid ribbon
200 g of monkfish in pieces.
Saffron
1. Put the shrimp smoke in the glass. Place Varona in its position with the clean mussels and
mussels in the Varona container. Program 18 minutes, Varoma, speed 1. If you are in the S/S
cruise phase, add 100 g of natural tomato.
2. Add the saffron, the squid ribbon counted into small pieces, the monkfish, the shelled
mussels and the clams. Program 10 minutes, 100º, left turn, spoon speed. Finally, when there
is a minute left, add the shrimp bodies.

Salmorejo
Ingredients
1 jar of 820 gr of whole peeled tomato.
1 boiled egg.
1 small can of natural tuna.
1 medium cucumber
1 clove garlic.
½ teaspoon salt.
400 gr of ice.
Accessories
Preparation
1. Boil an egg.
2. Pour all the ingredients into the glass (including the egg) and program 3 minutes,
progressive speed 5-10.
3. Add the ice and program 30 seconds, progressive speed 5-10.

Vegetable broth vinaigrette


A cube of low-fat vegetable broth
1 tablespoon of water
The broth from the can of natural tuna
A tablespoon of Modena vinegar (two, if you like a stronger flavor)
a teaspoon of cornstarch
a tablespoon of old-fashioned mustard.
Spinach cream
250 gr. frozen spinach (defrost to use)
salt
1 tablespoon of Cornstarch.
1/4 liter of skimmed milk
Nutmeg (0otional)
pepper (optional)
2 eggs

Heat the oven to 200º.


Drain the thawed spinach and put it in the Thermomix glass with salt. Program 5 minutes,
Varoma and spoon speed.
Add the Cornstarch for 1 minute, 100º, speed 2.
Add the skimmed milk, nutmeg and pepper (optional). Program 7 minutes, 100º, speed 2.
In a dish suitable for the oven, put a layer of cream, add two cracked eggs on top of it and
cover with the rest of the cream. Finish by baking for 10 minutes so that the eggs are cooked
and the surface is golden.
3 EGGS
Microwave "fried" eggs

Eggs
Salt
Oil (to "wet") the container

Take an egg from the refrigerator and a microwave-safe container. You put a few drops of oil
on the bottom and move it a little so that it spreads well throughout the bottom, you wipe it
with a kitchen paper to remove the excess.
You pour the egg with care and with something small, like a needle, prick the yolk. Then with a
knife you make a few cuts in the egg white and add salt to taste.
Put it in the microwave for about 30 seconds if the egg is at room temperature and about 45
seconds if it is cold from the refrigerator and THAT'S IT!!!

Omelet "potatoes" Dukan (PV)

1/2 cauliflower ("dukan potatoes")


200 gr. of onion
3 whole eggs
8 egg whites
Salt
Onion powder (optional)

1.- Separate the cauliflower into florets and put them in the varoma container.
2.- Fill the glass with water (1 L), place the varoma on top and program 25 MIN. - VAROMA -
SPEED 2 (You can make it in advance using another dish that uses varoma temperature).
3.- Put the onion in the glass and blend for 2 SEC. - SPEED.5 and then fry for 6 MIN. - VAROMA
- SPEED 2 (Don't worry, it doesn't stick).
4.- In a large bowl, cut the cauliflower into slices (including the stems) as if they were potatoes.
and also add the poached onion.
5.- Without washing the glass, add the eggs, egg whites and salt and beat for 3.30 MIN. -
SPEED.3 and pour over the vegetables and stir well. You can add a little onion powder if you
want more onion flavor.
6.- And now to set in a pan on the fire.

SURIMI OMELETTE
2 eggs
2 or 3 surimi bars
garlic and onion
Mix the finely chopped surimi with the pepper, a pinch of salt, garlic powder and finely cut
onion. Add the beaten egg, mix well and fry in a non-stick pan (remember to soak the pan with
a napkin soaked in oil).
4.- VEGETABLES

GREEN BEANS WITH TOMATO

Ingredients for 2 people.


Time: 38 minutes.

Ingredients:
300 g of natural tomato (whole peeled and drained).
1 large onion, peeled and cut into quarters.
3 cloves of peeled garlic.
500 g flat green beans cut into 4 cm pieces.
A little bit of salt.
300 g of water.
For the varoma: two eggs

Preparation:
1. We put the natural tomato in the glass, and blend for 5 seconds at speed 5. Remove from
the glass and reserve.
2. Add the onion and garlic to the glass and program for 4 seconds at speed 4. (we lower
ingredients with the help of a spatula).
3. We cook for 7 minutes, temperature 100º at speed 1.
4. We add butterflies: Add the tomato, beans, salt and water. We program 30 minutes, varoma
temperature, left turn, spoon speed.
Suggestion: it is an ideal recipe to take advantage of the steam that will be released in step 4.
We can put varoma in the container, some peeled eggplants cut into thick slices, and two eggs
to make them hard-boiled. Both the eggplants and the eggs will serve as a wonderful
accompaniment to this dish. It's delicious!
5.- FISH

Steamed mussels with clams.

1 K of cleaned mussels
1/4 g of clams
500 cl of water
salt
Pour the water and salt into the glass. Add the mussels to the Varoma container and place it in
position.
Program 10 minutes, Varoma temperature, speed 2. If at the end of the time they have not all
opened, add a few more minutes.
They can be seasoned with any spices you like.
Reserve the broth for other recipes.

Sea bass stuffed with shrimp and varoma tuna (Ducan Diet - PP)
Ingredients
400 gr. sea bass fillets
200 gr. peeled shrimp
1 can of natural tuna, drained
Salt, white pepper, garlic, parsley, sweet paprika.
Accessories
Varoma
Preparation
1.- Spread the fillets and carefully remove the bones.
2.-Place the crumbled tuna on top. And above all, the prawns.
3.- Season with salt and pepper, and add a little garlic, parsley and sweet pepper.
4.- Roll each fillet starting from the narrow part, being careful not to let the filling come out.
Roll tightly in plastic wrap (individually) and place on the varoma tray.
5.- Fill the glass with 1/2 liter of water. Close, place the varoma container in its place.
6.- Schedule 26 MIN. - VAROMA - SPEED. 2 (Time is approx. depending on the size of the rolls).

Tuna tartlets (Ducan Diet, PP)

Ingredients
2 cans of natural tuna, drained
300 gr. fresh whipped skimmed cheese. 0% landowner
3 eggs
1 tablespoon Dijon mustard
1/2 medium onion
Ground black pepper (to taste)
Accessories
Oven
Preparation
1.- Preheat the oven to 180º.
2.- Add the onion to the glass and chop at 4 until it is very small.
3.- Add the rest of the ingredients and mix 10 SEC - SPEED. 3
4.- Pour into individual silicone molds and bake for about 20-30 min. at 180º.
**NOTE: for those who limit the yolks, replace them with whites.

Sea bream or sea bass in salt


INGREDIENTS

1 whole 800g sea bream without removing the bone or cleaning


(It has to fit in the Varoma container, if it doesn't fit, cut off the tail and a little of the mouth
and cover it with aluminum foil, so that the salt doesn't get on it)
Coarse salt, approximately double the weight of gold
700g of water for the glass

Cover the bottom of the Varoma container with coarse salt. Wash and dry the sea bream very
well with kitchen paper, place it whole, with entrails and scales, on top of the salt. Next, cover
it with the same amount of salt, covering it completely and pressing it with your hands so that
the salt remains compact. Cover the container and set aside.

Meanwhile, put the water in the glass and program 8 minutes, varoma temperature, speed 2.

When the water is boiling, remove the beaker, put the Varoma container in and program 20
minutes, Varoma temperature, speed 2.

When the time is up, wait a few minutes for the temperature to drop before opening it.

Invert the lid of the Varoma, placing the container on top and taking it to the table.

Break up the salt and very carefully remove the sea bream, remove the rest of the salt, remove
the skin and remove the four fillets of the sea bream.

Hake with peppers

Two thawed and boneless hake fillets. (any type of white fish can be used, especially
boneless).
300 g red pepper, cleaned and cut into large pieces.
4 cloves of garlic.
1 onion cut into quarters.
a pinch of salt.
1/2 low- fat broth cube
1 1/2 cups of water.
For papillote: a few drops of lemon, salt and white pepper.
Preparation:
1. We put the oil with the garlic in the glass, and program 3 minutes, varoma temperature,
speed 1.
2. We add the onion and program 3 minutes, varoma temperature, speed 1.
3. Meanwhile, we prepare the hake fillets to make papillote with a few drops of lemon, salt
and a pinch of white pepper. We wrap it with albal paper. We reserve in the varoma container.
4. Add the pepper and half a bouillon cube to the glass. water and a pinch of salt. We put the
varoma in position, and program 15 minutes, varoma temperature, speed 1.
5. When the time is up, we take the varoma out of the glass, put the beaker in and blend the
contents at speed 7 for 1 minute. We lower the ingredients that have remained on the walls of
the glass, and program again for 30 seconds at speed 7.
6. We put the hake fillet on the plate, and cover it with the sauce... I like to accompany it with
a good salad.

stuffed squid
500 gr. squid, a small cube of 0% turkey ham (canned tuna or pieces of shrimp are also valid),
another small cube of 0% Burgos cheese, half a teaspoon of oat bran, the cooked egg white,
garlic, salt, and the squid legs.
Chop everything at speed four except the squid for a few seconds, stuff the squid, close with a
toothpick and place in the varoma and pour 250c.c of water down, 20 minutes at varoma
temperature, but they depend a little on the size of the squid

Piquillo peppers stuffed with cod brandade

500 gr. desalted cod


3 garlic cloves
milk (what is needed to whip the brandade)
Piquillo peppers
Pepper and nutmeg to taste

In a saucepan, boil the cod with the garlic cloves. Once it starts to boil, we remove it from the
heat and wait for the cod to cool a little.
In the thermomix glass, put the 3 cloves of garlic and the crumbled and boneless cod, a little
milk, pepper and nutmeg to taste. We put it on for about 3 minutes, speed 2 or 3, temperature
100. We see if it has gained consistency and we test for salt.
We put the brandade in a bowl or plate and fill the peppers. You can leave a little brandade
and make a little beichamel with cornstarch and milk to put on top and gratin. They are
addicted!!!

Salmon or Tuna Tart


INGREDIENTS

- 200g of smoked salmon or 1 can of natural tuna


- 100 g of peeled cooked shrimp
- 3 eggs
- 1 tbsp of 0% natural yogurt
- 1 cc baking powder
- 2 tsp of 0% spreadable cheese.
- ¼ glass of skimmed milk
- Pepper / Provençal herbs
PREPARATION
Mix all ingredients.
Pour the mixture into a cake pan on a sheet of parchment paper.
Put in the oven for 30 minutes at 180º.
TUNA STUFFED PEPPERS WITH DUKAN BECHAMEL (CRUISE PHASE):

CAN OF WHOLE RED PEPPERS THAT WE WILL DRAIN (MORE OR LESS 6 PEPPERS COME OUT)
TWO CANS OF NATURAL TUNA, WELL DRAINED
FOR THE DUKAN BECHAMEL: 20GM CORNHOUSE + A GLASS OF SKIMMED MILK (250) + Pinch
of NUTMEG + SALT AND PEPPER.

WE MAKE THE BECHAMEL: DILUTE THE CORNHOUSE WITH A MIXER LITTLE BY LITTLE IN COLD
MILK. HEAT OVER LOW HEAT UNTIL THICKENED AND SEASONED

WE ADD THE CANS OF TUNA TO THE BECHAMEL...AND PUT THE MIXTURE INTO THE PASTRY
BAG
6.- MEATS

VAROMA RABBIT (Suitable for Dukan diet)


Ingredients
-1 roasting bag
-1 chopped rabbit
-1 bay leaf
-1 sprig of rosemary.
-parsley
-thyme
cumin
chive
minced garlic
1 lemon
-peppers
-salt
-500 g of water

For the sauce:


The juice from having cooked the meat
the asadurita
3 tablespoons of whipped cheese
Preparation
We take the bag and put all the ingredients in it; We open the lemon in half and sprinkle the
juice over the meat and once squeezed we also put it inside the bag, close it and move it well,
massaging it a little so that the pieces of meat are well wrapped in the seasonings.
We put the water in the glass and program 35 minutes at Varoma temperature, speed 3.
We place the varoma on top where we will have placed the bag with the meat and spices. We
place the lid of the varoma tightly and let it cook.
Once the time is up, we uncover the varoma and turn the bag over and close it again and
program 10 min. temperature varoma speed 3. When the time is up, open the bag and put the
meat on a serving platter.
We remove the water from the glass and wash it, drying it well. And with the juice that has
remained in the bag plus the asadurita and 3 tablespoons of beaten cheese, we add it to the
glass and program 3 minutes, tempe. 100, speed 3 Once it has finished, we turn it to speed 6
and 7 and we pour the meat with this sauce and we serve the rest in a sauce boat.

Country style chicken.

Dressing
4 cloves of garlic
1 sprig of chopped fresh parsley or 1 teaspoon of dried parsley
10g vinegar
3 sprigs of thyme
30 g white wine
½ teaspoon pepper
2 broth cubes

1 kilo of chicken thighs


1. Put all the marinade ingredients in the glass. Program 5 seconds, speed 5. Reserve.
2. Place the chicken thighs in a roasting bag and pour the marinade we have prepared into it.
Close the bag and place it in the Varoma container.
3. Pour 1,500 g of water into the glass (no need to wash). Place the Varoma container in its
position and program 60 minutes, Varoma temperature, speed 1.
4. When the programmed time is up, open the lid of the Varoma container away from you and
turn the bag with the lamb over. Pour 150 g more water into the glass and program again for
60 minutes, Varoma temperature, speed 1.
5. Preheat the oven to 200º.
6. Remove the thighs from the bag and, with all their juice, place them in an ovenproof dish.
Bake until golden brown (approximately 10 minutes per side).

Moussaka Dukan (Dukan Diet, PV)

Ingredients
500 gr. minced meat
1 onion (+- 110 gr)
1 splash of white wine
Salt, pepper, oregano
400 gr. crushed tomato
2 large eggplants
Sante grated cheese <3% MG
BECHAMEL:
300 gr. peeled zucchini
30 gr. of onion
15 gr. of oil *
100 gr. skimmed milk
Salt, pepper, nutmeg
4 light cheeses from the farmhouse
Accessories

Preparation
1.- Put the onion in the glass, blend for 4 SEC. - SPEED 5 and cook 5 MIN. - 100º - SPEED.1
2.- Add the meat 10 MIN. - VAROMA - LEFT TURN - SPOON SPEED. When there are 5 min left.
Add the wine through the mouth.
3.- Cut the eggplants into slices and place them spread throughout the container and the
varoma tray.
4.- Add to the glass: Tomato, salt, pepper, oregano. Put the varoma in its place and program 30
MIN. - VAROMA - LEFT TURN - SPEED. SPOON.
5.- When the time is up, remove the varoma container and set aside. And also reserve the
meat with the sauce, pouring the glass well.
6.- Without washing the glass, make the BECHAMEL DUKAN (half the ingredients is enough)

7.- Assemble in a baking dish: A layer of eggplant - A layer of meat - A very thin layer of
bechamel - Another layer of eggplant - Another layer of meat - the rest of the bechamel and
finally the grated cheese, and put in the oven for 15 MIN. - 200º until gratin.
**BEWARE OF THE TOLERATE THOSE (GRATED CHEESE AND LIGHT CHEESES).

Egg, cheese and tuna burgers


Two cups of jarred egg whites
An 80 g can. natural tuna
40g. fresh cheese
1/2 liter of water.
Salt, pepper, curry or basil

Pour all the ingredients into the Thermomix glass and mix for 4 seconds, speed 5.
Put a square of transparent film in the Thermomix cup, so that it sticks out so that you can tie
the ends.
Fill the cup with the previous mixture and tie crossing the corners. Repeat the operation until
you get three packets.
Put the water in the Thermomix glass, add Varoma with the three packets and cover. Program
10 minutes, Varoma, speed 1.
When opening, be careful not to burn yourself, cut the knot with scissors, place it on a plate
turned upside down and finish removing the plastic.

chicken soufflé
Ingredients:
3 eggs (I made it only with whites)
4 or 5 tablespoons of whipped fresh cheese 0% mg
2 tablespoons of San Millan cheese spread 0% mg
4 slices of chicken breast cold cuts
Half a teaspoon of yeast
a little salt, oregano and nutmeg
Elaboration:
Put the eggs (or whites) in the Thermomix for 1 and a half minutes at speed 4. Add the rest of
the ingredients, and cook for 2 minutes at speed 4. Pour the resulting mixture into a silicone
mold suitable for baking and put in the oven at medium height at 180º for 30 minutes (this
depends on each oven, keep an eye on it, be careful that if you leave it for too long it will dry
out)

MILANESES NAPOLITAN STYLE

WE BATTER THE BEEF STEAKS WITH WHEAT BRAN AND EGG. WE COOK THEM IN THE OVEN AT
180º FOR 15 min ONCE DONE, WE PUT 1 SLICE OF LIGHT CHEESE AND A TABLESPOOON OF
TOMATO SAUCE. AND GRATINAMO
BEEF STEAKS WITH PEPPER SAUCE

Chicken Bleu Cord

INGREDIENTS
- 1 Chicken breast (or turkey).
- 1 0% spreadable cheese.
- 1 slice of fat-free ham.
- 2 CS of oat bran.

Preparation
We put the ground meat in the varoma container and season, mix well with the spatula, add
the bay leaves and set aside.
We place the onion, carrots, the piece of celery or pepper and the sliced mushrooms in the
glass and chop for 5 seconds at speed 5, then we pour the vegetables into the basket, using
the spatula so that there are no remains in the glass.
We add 350 g of water, we introduce the basket with the vegetables and we program 7
minutes, varoma temperature, speed 1. When the time is up, place the varoma container in its
position and program 20 minutes, varoma temperature, speed 1.
Once the time is up, we remove the varoma container, remove the basket and empty the glass
with the cooking water, then we put the vegetables, the crushed natural tomato and the
ground meat in the glass and grind everything for 15 seconds progressive speed 5- 10.
With the sauce already prepared, we prepare to assemble the lasagna and assemble it with a
layer of turkey slices, another of Bolognese sauce, another layer of turkey slices, another of
Bolognese sauce, until we make three layers and finish with a layer of slices. of Turkey.
Then we will prepare the bechamel, without washing the glass we add: the cornstarch, the
milk, the salt, the pepper and the nutmeg and we program 12 minutes, temperature 100º,
speed 4.
Once the sauce is made, we will proceed to cover the bechamel and put a little light cheese on
top; We will let it gratin for about 10 minutes until it turns golden,
Suggestions: We can also prepare some stuffed zucchini at the same time that we prepare the
lasagna, we just have to cut the zucchini lengthwise and empty them, so that they cook we will
put them in the varoma tray and once done we just have to fill them with the bolognese sauce,
add a Pinch of bechamel and gratin. They look wonderfully good!
7.- DESSERTS

liquid yogurt

1 liter of skimmed milk


1 actimel 0%
6g Aspartame powder
15 g skimmed milk powder

Put the milk in the glass and heat it for 3 minutes at 90º and speed 2 1/2.
Add the rest of the ingredients and mix 15 seconds speed 3.
Leave the glass in the machine with the preparation inside, cover it with a cloth or an insulated
freezer bag and keep it that way for 8 hours.
After the time, put it in the container you want and let it cool in the refrigerator for more than
two hours.

Dukan cheesecake

* 100 grams of cheese spread 0% mg (SAINT MILLAN)


* 1 natural skimmed yogurt 0% mg
* 4 light cheeses (EL CASERIO or SANTE)
* 125 ml skimmed milk
* 2 tablespoons of cornstarch
* 2 Eggs (or 2 egg whites)
* 2-3 tablespoons of liquid sweetener
* 1 sachet of raising agent

We mix all the ingredients in the glass, speed 3 for 40 seconds.


We pour the mixture into a silicone mold (I used the plum-cake one). We put it in the oven
previously preheated to 170ºC at medium height for 45 minutes (the time will depend on the
mold used). Do not open the oven until at least 30 minutes into cooking.
Eye!! Be careful not to let the cake burn on the bottom or top. In the latter case, after the first
30 minutes, cover the cake with a little aluminum foil and continue cooking.
We will know that it is done if when pricking it with the tip of a knife it comes out clean.

Flan Dukan
INGREDIENTS

5 eggs
375 g skimmed milk
1 tablespoon of Aspartame
6 drops of Vanilla Aroma
Place the milk, eggs and sweetener into the mixing bowl and mix 10 sec./speed. 4.

2 egg yolks
3 gelatin sheets

Lemon zest

1.- Soak the gelatin in cold water for about 5 minutes.


2.- Drain the yogurts in a strainer to release the liquid.
