Chingri Malai Curry (Prawn Curry)

Ingredients:

● 500g prawns, cleaned and deveined


● 2 tablespoons mustard oil
● 1 onion, finely chopped
● 2 tablespoons ginger-garlic paste
● 1 teaspoon turmeric powder
● 1 teaspoon red chili powder
● 1 cup coconut milk
● 2 green chilies, slit
● Salt to taste
● Fresh coriander leaves for garnish

Instructions:

1. Marinate Prawns: Mix prawns with salt and half the turmeric. Let them marinate for
15 minutes.
2. Fry Prawns: Heat mustard oil in a pan. Lightly fry the prawns until they turn pink.
Remove and set aside.
3. Cook Onions: In the same oil, add chopped onions and sauté until golden brown.
Add ginger-garlic paste and cook for another minute.
4. Add Spices: Add remaining turmeric, red chili powder, and stir well.
5. Add Coconut Milk: Pour in the coconut milk and bring to a simmer. Add green
chilies.
6. Simmer with Prawns: Add the fried prawns to the gravy. Cook for 5-7 minutes on
low heat.
7. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with steamed
rice. Enjoy the rich and creamy Chingri Malai Curry!
