Ingredients:
For the Broth:
● 1 kg beef shank or shin bones
● 2 liters water

● 10 black peppercorns

For the Meatballs:
● 500 grams ground beef
● 200 grams tapioca starch
● 1 egg
● 1 tablespoon minced garlic
● 1 tablespoon minced onion
● 1 teaspoon salt
● 1/2 teaspoon black pepper
● 1/4 teaspoon ground nutmeg
For the Wontons:
● 150 grams wonton wrappers
● 200 grams ground pork
● 100 grams shrimp, chopped
● 50 grams bamboo shoots, chopped
● 2 tablespoons minced scallions
● 1 tablespoon soy sauce
● 1 tablespoon sesame oil
● 1/2 teaspoon salt
● 1/4 teaspoon black pepper
For the Additional Toppings:
● 200 grams fresh bakwan sayur (vegetable fritters)
● 200 grams mie kuning (yellow noodles)
● 200 grams tauge (bean sprouts)
● 100 grams fried shallots
● Sambal (chili sauce)

Instructions:
1. Prepare the Broth: In a large pot, combine the beef bones, water, onion, garlic, ginger,
lemongrass, bay leaves, black peppercorns, salt, ground coriander, and ground cumin.
Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the broth is rich and
flavorful. Skim off any foam that forms on the surface.
2. Make the Meatballs: In a large bowl, combine the ground beef, tapioca starch, egg,
minced garlic, minced onion, salt, black pepper, and ground nutmeg. Mix well until the
ingredients are evenly distributed.
3. Shape the Meatballs: Wet your hands to prevent the mixture from sticking. Take a small
amount of the meatball mixture and roll it into a ball, about 1-inch in diameter. Repeat with
the remaining mixture.
4. Cook the Meatballs: Bring a pot of salted water to a boil. Gently drop the meatballs into
the boiling water and cook for 3-4 minutes, or until they float to the surface. Drain the
meatballs and set aside.
