Beef Chilli

Ingredients:

¼ Cup. Vegetable Oil

2-3 lbs Ground Beef

1 Large Spanish Onions Diced

5 Celery Ribs Diced

1lbs Carrots Peeled and Diced

5 each Garlic Cloves Minced

3T Paprika

4-5T Chili Powder

1-2 Bay Leaves

1T Unsweetened Cocoa Powder (optional)

½t Cinnamon

1-100oz can Whole Plum Tomatoes Drained and Chopped (Juice Reserved)

2-3Cups Beef Stock

3T Tomato Paste

3- 19oz Cans Kidney Beans Drained and Rinsed

Salt and pepper T/T

*chipotle sauce *chili flakes *tobacco or other hot chili sauce *chopped cilantro *cider vinegar

*add these ingredients to create different heat and flavour profiles.

Method:

Heat oil in a heavy bottom stock pot. Add ground beef and cook until browned. Add onions, carrots and celery and cook
until soft. Stir in spices and cook approximately 1 minute. Stir in garlic and add tomato paste stirring in until fully
blended. Add tomatoes, stock and juice and bring to a boil. Reduce heat and simmer for approximately 45 minutes. Add
beans and simmer an additional 10 minutes.
