Ciorbă de Legume (Vegetable Soup)

Ingredients:

 1 onion, chopped
 2 carrots, chopped
 1 parsnip, chopped
 1 celery stalk, chopped
 1 potato, cubed
 1 zucchini, cubed
 2 tomatoes, chopped
 1 bell pepper, chopped
 1 cup green beans, cut into pieces
 2 tablespoons olive oil
 6 cups vegetable broth
 Salt and pepper to taste
 Fresh parsley, chopped

Instructions:

1. Heat olive oil in a large pot over medium heat.


2. Add onion, carrots, parsnip, and celery. Sauté until softened.
3. Add the potato, zucchini, tomatoes, bell pepper, and green beans.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce heat and simmer until all the vegetables are tender (about 25-30 minutes).
6. Season with salt and pepper. Garnish with fresh parsley before serving.
