Opening

 Switch on all the Lights.


 Switch on the Exhaust and stove.
 Switch on the Fryer.
 Prepare Chai.
 Organize your equipment from dishwashing area:

3. Containers
4. Utensils
5. Inserts
6. Sauce Bottles
7. Chai Boiler
8. Fryer Baskets

 Refill Workstations with:


1. Paratha
2. Chicken Tikka (5L Insert)
3. Paneer Tikka (5L Insert)
4. Butter Sauce (Container)
5. Galouti Kebab (Container)
6. Seekh Kebab (Container)
7. Noodles (Container)
8. Soya Chaap (Container)
9. Aloo Masala (Container)
10. Chana Masala (Container)
11. Spicy Mayo (Bottles)
12. Schezwan Sauce (Bottles)
13. Vegan Mayo (Bottles)
14. Mint Sauce (Small Insert)
15. Green Chillies (Small Insert)
16. Cilantro (Small Insert)
17. Onions (Small Insert)
18. Masala for Fries (In shaker)
19. Peri Peri Masala (In shaker)

 Organize the stove:


1. Oil with Ladle

 Log into POS and Payment Merchant.


 Turn on the Delivery Tablets (Uber, Doordash, Skip)
 Check the list from day before and prepare an out-of-stock/low list.
 Refill cutlery and disposables
1. Spoons
2. Forks
3. Napkins
4. Stir sticks.
5. Ketchup
6. Sugar sachets
7. 8 oz Teacups and lids
8. 16 oz Drink cups and lids
9. #1 Kraft box
10. #3 Kraft box
11. #535 Bags
12. #10 Bags
 Ensure all trash cans are clean and have a bag inside.
 Ensure all surfaces are clean.
 Ensure the floor is clean.
 Ensure the sticker dispenser is filled.
 Open the Blinds and switch on the Open Sign.
 Place the sandwich board outside.

Closing
 Switch off the stove, griddle, and fryer.
 Switch off the delivery tablets.
 Clean the griddle with chemical and then wipe and sanitize.
 Re organize all the ingredients and food products. (back to their storage places fridge-
freezer etc.)
 Organize and clean the fridge inside and out.
 Clean the stove and workstation backsplash.
 Clean the stove burner tops.
 Empty out the Chai Boiler.
 Wipe down the blender mixer and place jug in dishwashing.
 Dishwashing
1. Pots and Pans
2. Stove Equipment
3. Containers
4. Utensils
5. Inserts
6. Sauce Bottles

8. Fryer Baskets
 Sweep and mop the floor.
 Take out trash and clean trash cans.
 Clean all work surfaces and under equipment. (Remove the equipment and clean under)
 Check underneath all workstations for food or scraps.
 Organize the dishwashing area.
 Wipe the till, front table and stools.
 Refill and organize the drinks cooler.
 Ensure all the electronics are plugged in (POS, Payment Merchant, Delivery tablets)
 Bring in the sandwich board, close the blinds and switch off the lights.
