3) Process of Mushroom Farming:

Vertical farming of mushrooms in India involves several steps, from substrate


preparation to harvesting. Here's a detailed process:

1. **Selection of Mushroom Species:**


- Choose suitable mushroom species for vertical farming. In India, commonly
cultivated mushrooms include oyster mushrooms, button mushrooms, and shiitake
mushrooms.

2. **Substrate Preparation:**
- The substrate is the material on which mushrooms grow. Common substrates
include agricultural waste such as paddy straw, wheat straw, sugarcane bagasse,
etc.
- The substrate needs to be pasteurized to kill off any competing organisms. This
can be done by steam pasteurization or chemical treatment.
- Once pasteurized, the substrate is cooled down to the desired temperature
before inoculation.

3. **Inoculation:**
- Mushroom spawn (cultured mycelium) is introduced into the substrate. This can
be done by mixing the spawn thoroughly into the substrate.
- Spawn run: The mycelium grows throughout the substrate, forming a network.

4. **Incubation:**
- The inoculated substrate is kept in a controlled environment with suitable
temperature, humidity, and ventilation.
- Incubation period varies depending on the mushroom species but generally lasts
2-4 weeks.

5. **Casing (Optional for some species):**


- For some species like button mushrooms, a casing layer is added on top of the
substrate to provide a microclimate for mushroom formation.
- The casing layer can be made of materials like peat moss, vermiculite, or a mix of
soil and compost.

6. **Pinhead Formation:**
- Under controlled conditions of temperature and humidity, small pinheads begin to
form from the mycelium.
- This stage can take a week or more, depending on the species.

7. **Fruiting:**
- As the pinheads mature, they develop into mushrooms.
- During this stage, maintaining optimal environmental conditions is crucial for the
development of high-quality mushrooms.

8. **Harvesting:**
- Mushrooms are ready to be harvested when the caps are fully open but before
the spores start to drop.
- Harvesting is done by gently twisting or cutting the mushrooms from the
substrate.

9. **Post-Harvest Handling:**
- After harvesting, mushrooms need to be cleaned and sorted.
- Packaging: Mushrooms are packed in suitable packaging material for
transportation and sale.
- Storage: Mushrooms are stored at low temperatures to maintain freshness.

10. **Maintenance and Monitoring:**


- Regular monitoring of environmental conditions such as temperature, humidity,
and CO2 levels is essential.
- Maintenance of equipment and cleanliness of the facility to prevent
contamination and diseases.

11. **Waste Management:**


- Proper disposal or recycling of spent substrate and other waste materials.

12. **Market Distribution:**


- Establish a distribution network to supply mushrooms to local markets,
restaurants, and supermarkets.
