Speedy Chipotle Chicken Tacos

What we send

1 capsicum

300g red cabbage


2 carrots

chicken thigh fillets

40g chipotle in adobo sauce

12 flour tortillas

Our veggies come fresh from the farm, so please wash them before cooking.

What you'll need

 80ml (⅓ cup) mayonnaise


 2 tbs olive oil
 1 tbs tomato paste

What you'll use

 large frypan
 microwave (optional)

Cook this recipe in 5 simple steps


1.

1. Prep ingredients

Thinly slice the capsicum. Thinly slice the cabbage with a sharp knife or mandoline.
Coarsely grate the carrots. Thinly slice the chicken. Combine half the chipotle (see
Kitchen notes), 80ml (⅓ cup) mayonnaise and 1 tbs water in a bowl and season with
salt and pepper.

2. Cook chicken and capsicum

Heat a generous drizzle of olive oil in a large frypan over medium-high heat. Cook
the chicken, stirring regularly, for 2-3 mins until browned. Add the capsicum and
cook, stirring, for 1-2 mins until softened.

3. Add chipotle

Add the remaining chipotle, 1 tbs tomato paste and 80ml (⅓ cup) water to the pan.
Bring to a simmer and cook, stirring occasionally, for 2 mins or until the liquid is
slightly reduced. Remove the pan from the heat. Taste, then season with salt and
pepper.

4. Warm tortillas

Meanwhile, put half the tortillas on a plate, slightly overlapping, and microwave for
30 secs or until warmed through (see Kitchen notes). Repeat with the remaining
tortillas.

5. Serve up

Put the cabbage and carrot in a large bowl. Add half the chipotle mayo and toss to
combine. Top the tortillas with the slaw and chicken mixture, then drizzle with the
remaining chipotle mayo. Enjoy!

6. Kitchen notes

Chipotle in adobo is a smoky, spicy Mexican sauce. We've recommended this amount
for flavour, but if you prefer less heat, reduce or omit the chipotle from the mayo
dressing. ~ Don't have a microwave? You can warm the tortillas, wrapped in two
separate foil packages, in a 220C oven for 8 mins or until warmed through.
