5. a) When boiling vegetables, the steam escapes from the food’s surface. The steam has a high
temperature. The lid of the pot returns the steam to the food and cooks it faster due to its high
latent heat of vaporization. However, the vegetables cooked in the pot without a lid take
longer to cook because the pot allows the steam to leave the pot without returning to the
food’s surface.
