PROPOSAL DETAILS
Subject Food safety and shelf-life analysis

Sample collection can be at the responsibility of one of our laboratory


Sample collection
technicians or alternatively, it can be carried out by the customer.

Our laboratory has all the material suitable for carrying out the
required formulation tests.
Sampling
In view of the COVID-19, our laboratory provides its technicians with
material the following equipment for individual protection: masks, visors,
gloves and hand sanitizer.

WORKPLAN
Objectives:

Vitor Menas wishes to export acorn flour to a Swiss customer, ensuring


the food safety of the product.
The client has the acorn flour certified as organic (Reg. (EU) 848/2018), for
which GMO and ionizing radiation absence are requirements. In this sense,
GMO (Reg. (EC) nº 1829/2003 & 1830/2003), ionizing radiation (Directive
1999/2/EC & 1999/3/EC) and traceability (Reg. (EC) nº 178/2002) regulations
are ensured.
The industrial facility in which the acorn flour is processed is allergen free
(Reg. (EU) nº 1169/2011).

The client also requests the nutritional declaration (Reg, (EU) 1169/2011) and
the shelf-life assessment of the product.

Tasks:
Colab4Food will perform the following analysis (adaptable to the client’s
needs):
1. Nutritional analysis:
➢ Sodium (Atomic absorption spectroscopy - AAS)
➢ Total ash (Thermogravimetric method)
➢ Moisture (Thermogravimetric method)
➢ Sugar (NP 1420 - Luff-Schoorl method)
➢ Total fat (NP 4168)
➢ Lipid Profile (saturated, monounsaturated, polyunsaturated (GC-FID)
➢ Protein (Combustion method)
➢ Salt (calculation)
➢ Carbohydrates (calculation)
➢ Energy value (calculation)

2. Heavy metals: cadmium and lead (Graphite furnace atomic absorption


spectroscopy - GFAAS)

3. Pesticides: determination of pesticide traces (2,4-DDD; 4,4-DDD; 2,4-DDE;


2,4-DDT; 4,4-DDT; Tetradifão; Beta-BHC; Acrinatrina; Antraquinona;
Bifentrina; Lambda-Cialotrina e Pirimifos-Metilo) (GC-MS/MS + LC-
MS/MS)

4. Micotoxins: aflatoxins (B1+B2+G1+G2), Ochratoxin A, Zearalenone,


Vomitoxin / Deoxynivalenol (DON) (LC-MS/MS)

5. Shelf-life assessment:
Samples will be stored at 15ºC and analysed initial time (0 months), and
every 3 months to detect and enumerate the following
microorganisms (time 0, 3, 6, 9, and 12 months):
➢ microorganisms 30ºC
➢ molds and yeasts
➢ Enterobacteriaceae
➢ Bacillus cereus
These trials will be interrupted in case of chemical and/or sensory
deterioration of the products (5. Chemical and sensory stability).

6. Chemical and sensory stability:


During the expected storage time and conditions (12 months at 15ºC),
the following determinations will be conducted:
- Sensory evaluation (colour – visual and instrumental; aroma, taste and
overall appreciation)
- Fat acidity (ISO 3960) and peroxide value (NP 2967) of the flour
These trials will be conducted at initial time (0 months) and every 2
months (time 0, 2, 4, 6, 8, 10 and t12).
In case of chemical and/or sensory deterioration of the samples these
trials will be interrupted.

These analyses will be performed on acorn flour samples provided by the


client.

Outputs delivered by Colab4Food:

• Product labelling requirements and nutritional declaration (Reg. (EU)


1169/2011)
• Report with:
➢ Heavy metals (Reg. (EC) 1881/2006)
➢ Pesticides
➢ Micotoxins
➢ Microbiological analysis
➢ Chemical analysis
• Report with:
➢ Shelf-life assessment (12 months)
➢ Chemical and sensory stability (12 months)

• As many meetings/interactions needed between the client and


Colab4Food.

Success criteria:

Report delivery on time (15 days after completion of the service).


Customer’s positive evaluation (customer satisfaction survey).

100% of the total value of the Service 1 should be paid out
