Carrot Cake / Muffin

Ingredients: Grams:

All purpose flour 385 grams


Egg 4 pcs
Grated carrot 350 grams
White sugar 300 grams
Raisin 65 grams
Nuts 60 grams
Baking powder 4 grams
Baking soda 3 grams
Nutmeg 0.5 grams
Salt 2 grams
Milk powder 50 grams
Mollases 30 grams
Cinnamon 1 gram
Coconut oil 165 grams

Baking time: 20-25 minutes


Baking temperature: 165⁰c-170⁰c
Equipment: Oven

Tools needed:
Muffin pan Mixing bowl
Ice cream scooper Knife
Muffin liner Weighing scale
Rubber spatula Grater
Sifter

Procedure:
 Roast the nuts and chop
 Mix the egg in a bowl using rubber spatula
 Gradually add the sugar,followed by salt
 Add the grated carrots slowly and add the molasses.Set aside
 In a separate bowl combine the all purpose flour,milk powder,baking
powder,baking soda,nutmeg and cinnamon,gradually add in a liquid
ingredients
 Add the raisin and nuts.
 Pour the oil,mix until the batter mixture absorb the oil
 Scoop the batter mixture using ice cream scooper and pour in a muffin pan
with muffin liner.
 Sprinkle a raisin or nuts in a top of batter mixture
 Pre-heat the oven
 Bake for 20-25 minutes
 Let it cool and store in a dry storage.
