1⁄3 C orange juice

Directions

For Waffles: Sift dry ingredients in a medium basin.


Whisk egg whites until firm; put aside.
Mix egg yolks, milk, agave nectar, and oil. (Coconut oil solidifies when mixed with cold milk, so slowly warm it before adding it).
Blend with dry ingredients and fold in the egg whites.
Pour batter on hot waffle iron in recommended amount. Cook as directed.
For Berry Sauce: Medium-heat half C of preserves, orange juice, and blueberries in a saucepan. When it boils, lower heat and cook for 5 mins, stirring periodically until thickened.
Stir in leftover strawberries and blueberries. Let it stand briefly.
For Assembly: Place berry sauce and whipped cream on each waffle.
For birthdays, add a candle on the top of the whipped cream and light it after serving birthday waffles. Anchor candle with a fresh strawberry if it isn't stiff enough to stay straight.

Ingredients

1 C skim milk

16 slices day-old French bread, cut in 1/2-inch-thick slices

Directions

Before doing anything else, set the oven to heat and spray.
Whisk milk and the next five ingredients. Stir until well mixed.
Put bread in 13x9" casserole dish, coat all sides with the milk mixture, and let rest for 5 mins.
Put 4 bread slices on the heated waffle maker's size, depending on its size.
Cook until done for 3 to 5 mins.
Do same with the leftover bread.
