Healthy Banana Oatmeal Pancakes
Ingredients:
1 cup powdered oatmeal
1 ripe banana
2 eggs
1/2 cup coconut milk
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon cinnamon
Oil for the pan
Preparation

Pour the oatmeal


powder into a
bowl, add the
banana, eggs,
milk, vanilla
extract, salt and
cinnamon.
Whisk until everything is
integrated.
Heat non-stick skillet and
lightly spray with oil.
Cook the pancakes:
Pour small amounts of
batter into skillet to form
pancakes.
Cook for 2-3 minutes
per side, or until

surface and the edges
appear firm.
Flip and cook another
1-2 minutes until
golden brown.
