Cocktails

Absinthe
Duchess
 1 1/2 shots of sweet vermouth (Carpano Antica)
 1 1/2 shots of dry vermouth (Lillet)
 1/2 shot of absinthe
 1/2 shot of chilled water
 1 dash of Orange bitters
Stir with ice until chilled, then service in an old fashioned glass

Gin
Dirty Martini
Nat's favourite.
 2 and 1/2 shots of gin
 1/2 shot of Lillet Blanc vermouth
 Olive brine
Serve in a martini glass with three olives on a cocktail stick

Rye
1920
A perfect Manhattan with orange bitters.
 2 shots of Rye (100% proof)
 1/2 shot of sweet vermouth (Carpano Antica)
 1/2 shot of dry vermouth (Lillet)
 1 dash of Orange bitters
 1/4 shot of chilled water (omit if using wet ice)
Serve in a coupe glass with orange zest twist

High Ryeser
A high-proof balanced Manhattan.
 1 1/2 shots of Rye (100% proof)
 1 1/2 shots of sweet vermouth (Carpano Antica)
 1 dash of Angostura bitters
Serve in a coupe glass with a Luxardo Maraschino cherry

Whisky
Manhattan
A classic.
 1 1/2 shots of bourbon
 1/2 shot of 100 proof rye
 1 shot of sweet vermouth (Carpano Antica)
 1 dash of Angostura bitters
Serve in a coupe glass with a Luxardo Maraschino cherry

No So Perfect Manhattan
A less boozy and slightly sweeter Manhattan.
 2 shots of bourbon
 1/2 shot of sweet vermouth (Carpano Antica)
 1/2 shot of vermouth (Lillet)
 2 dashes of Orange bitters
Stir with ice, then serve in a coupe glass with a two Luxardo Maraschino cherries on a skewer

Penicillin
A Whisky Sour with honey, ginger, and smoke.
 2 shots of Laphroaig
 3/4 shot of ginger honey syrup
o 1/4 cup of water
o 1/4 cup of honey
o 3 inch stick of fresh ginger, peeled, sliced using a peeler
o Bring water and honey to the boil, reduce to a simmer and add ginger for five
minutes, then strain and chill
 1/2 shot of freshly squeezed lemon juice
Rob Roy
A Manhattan with whisky instead of bourbon.
 2 shots of scotch whisky
 1 shot of sweet vermouth (Carpano Antica)
 1 dash of Angostura bitters
 1 dash of Peychaud bitters
Velvet Old Fashioned
This recipe makes two; halve it for one. Or drink two.
 1/2 shot of simple syrup
o Six demerara sugar cubes
o 1/8th of a cup of water
 1/2 shot of Pedro Ximenez sherry
 4 shots of Laphroaig
 4 dashes of Angostura bitters
Whiskey Sour
Usually made with bourbon, but we've tried this with Laphroaig
 2 shots of Laphroaig
 2 dashes of Angostura bitters
 1 shot of freshly squeezed lemon juice
 1 shot of 1:1 simple syrup
William Wallace
A Rob Roy with a slightly sweeter side.
 1 2/3 shots of scotch whisky
 1/3 shot of sweet vermouth
 1/3 shot of Pedro Ximenez sherry
 3 dashes of Orange bitters
