DAILY CHECKLIST

Maintenance

Clean the toilet, sink, faucet

Wipe the glass / doors

Dust and wipe shelves

Sweep and mop the floor

Put trash bags for kitchen and comfort room

Clean and organize food storage

Brush and wash trays

Dry and wipe utensils

Sanitize all surfaces (counter top, cake chillers, tables and chairs)

MID SHIFT M T W TH F S S

Clean the toilet, sink, and faucet (every after 2 hours)

Wipe down mirrors and countertops

Sweep and mop the floor (if needed)

Empty the trash and replace the liner (if needed)

Replenish toilet paper

CLOSING SHIFT M T W TH F S S

Bust out and sanitize (Pre-close at 8pm)

Sweep, scrub and dry the flooring

Wipe and sanitize all tables and chairs

Wash, rinse, dry all towels

Clean mirrors and doors

Clean kitchen sink and surfaces (sweep, mop)

Set aside all trash bags and wait for pick up

Turn off lights

Turn on coffee machine

Check and receive deliveries

Set up bar tools / equipments

Check ice chest

Check back up

Check trash bag and trash bin

Check near to expire food, fruits and clean the chillers

Check opening endorsement

Sweep and mop bar area (if needed)

Inventory

Check milk and cream

Clean dispatch area

Back up before time out (Fruits, Powder, Syrup)

CLOSING SHIFT M T W TH F S S

Check supplies and refill (if needed)

Wipe all syrup bottles

Clean the blenders and work station area

Coffee machine back flushing

Take out trash

Check inventory / market

List down bar requests for tomorrow’s shift

Wash and clean bar tools / equipments

Soak and wash bar towels

Check all the line and back up items (RL update)

Check near expiry food, fruits, etc.

Do the mise en place

Check labels

Double check the line and back up items (mise en place)

RL and out items update

Do the mise en place (if needed)

CLOSING SHIFT M T W TH F S S

Double check the RL items

Do the mise en place (if needed)

Do the inventory

Remove the rice from the rice cooker

Write all the to-do tasks

Check RL market (Fruits, vegetables, etc.)

Put all the breads in the chiller

Clean up (Microwave, Toaster, Panini maker, Electric pot)

Unplug all the equipments

Turn off lights
