Culinary masterpiece and pride of Ukraine – Borscht

Hello everybody, and nice to see you here today. My name is Katherine, in from Ukraine.

羅宋湯 Borscht (beetroot soup) is a dish with a national character. It is primarily associated with Ukraine. This
“association” smells delicious and promises warmth, comfort, fullness, and, thus, a sense of peace.

was recognized as a UNESCO Cultural Heritage in 2022.

Saturated red colour


Beetroots are known for their earthy flavour and surprising sweetness. When cooked, usually boiled,
it becomes soft and juicy.

The classic red beet soup always included beet. Fresh pork salo (fat) crushed with garlic, salt, and
culinary plants was added to the soup at the end of boiling. Then the pot with borsch was covered
with a lid and left for at least half an hour to infuse (the longer the better).

There are many versions, and the practice entails the recipe, cooking method and occasion,
according to which a certain variety is prepared. It is prepared primarily by women, although many
men also prepare it as an everyday dish.

Steps
1: Wash bone-in pork, pour in water and cook for 3 hours, add salt, five-spice peper and bay leaves.
3: Peel and chop the beetroot. Add a little oil and flour to a frying pan and simmer until tender.
4: Dice onion, chop carrot, and simmer over low heat for 3 minutes, then add tomato sauce.
5: Peel and cut potatoes into chunks, add chopped carrots, beets, and Broad beans to the broth and
simmer.
6, add sugar and vinegar, pour the broth into the borscht and season with salt, or use lemon juice
and garlic to taste, then turn off the heat and let it sit for 15 minutes before serving with sour cream.

In any case, every hostess has her recipe for borsch, her secrets of cooking, which are usually
passed from generation to generation. Ukrainian ancestors believed that true borsch should be so
rich and dense that a spoon can stand in it. And the steam above the soup plate should be so thick
that children sitting at the table should be hardly seen))

The unofficial "borscht index" (similar to the "Big Mac index") is often used by the Ukrainian mass
media to assess the purchasing power of various currencies and determine the real hryvnia inflation.
The borscht index is the average cost of all products needed to prepare a certain volume of this dish,
as of a certain date.
