Citrus Salad With Baby Spinach
100 g Lime
200 g Oranges
30 g Baby spinach
10 g Pine nuts
1g Mint
1g Basil
30 mL Light olive oil
Method
Preparation Steps
1. Segment the limes and oranges. Keep the juice for the dressing
2. Wash and dry the spinach
3. Dry toast the pine nuts in a pan
4. Slice the spinach, mint and basil leaves into chiffonnade
5. Mix the oil with the citrus juice and season to taste
6. Mix the spinach mixture with lime and orange segments and half the pine nuts.
Add the dressing and toss through
