Instructions
Reminder of the Practical structure:
BELOW IS SOME VERY IMPORTANT INFORMATION FOR CONDUCTING THIS PRACTICAL
ASSESSMENT TASK

The Process
This practical will be conducted in two Parts:

Part 1
• This must be conducted and completed by you at home, at least 2 days
before your exam on 06 June 2024.

• In Part 1, you will be taking some photographs of your results. These will be
uploaded into your SBA on 6 June 2024.

• A list of Apparatus that must be available for the practical is given below.

• Photograph submissions will be made on 06 June 2024 during the exam


time. A separate link will be available for submissions.

Part 2 (06 June 2024)


• Part 2A:
Part 2A will be questions that you must answer relating to this practical
that you have previously conducted at home.

• Part 2B:

Part 2B will include a task to design an investigation - but you will NOT
carry it out. It will be related to the investigation you carried out in Part1.
Part 1
Instructions
The following question was posed on a popular South African blog site: "What happens
when you add fresh pineapple to dessert jellies?"

A subscriber (blog buddy) called Tom@work replied with the following answer:

"The jelly will not set because of the enzyme bromelain in fresh pineapple. Gelatine is
made from animal products and the bromelain destroys the protein in the gelatine,
preventing the jelly from setting properly. You can pre-boil the pineapple instead,
which destroys the bromelain enzyme."

You will now carry out a short investigation to find out whether Tom@work is telling the
truth.

Make sure you have the following apparatus/equipment to conduct Part 1

Apparatus:
• Three identical drinking glasses

• A flat-bottomed dish with water and ice cubes that the three glasses can
stand in to cool the glasses down. (The water with ice cubes must be at least
5cm deep)

• Gelatine powder (Dessert Jelly eg. ) Available from the


supermarket

• 5 ml spoon (measuring spoon or medicine spoon)


• Stirring teaspoon
• Sharp knife

• A slice of slice of fresh pineapple (Cut a disk of pineapple about


1cm thick.) You may be able to buy a single slice or two from the
supermarket.

• Cutting surface
• Permanent marking pen

• Paper towel
• 20 ml syringe or 20ml measuring spoon or 10ml measuring spoon
• Water

• Timing device such as a clock or watch


• 2 cups/suitable containers
• You must also have access to a kettle to boil water.

Please also include TWO pots or bowls for the boiling water.
Ensure you have all the apparatus ready before you begin.
Also:

Photographic recording device.

Results from the following procedure must be available to refer to on the 6 June 2024 and
photographs to upload.

Part 1 Method:

1. Use your knife and cutting surface, carefully cut your pineapple into
quarters (see the diagram).

2. Cut one of the quarters into small pieces (about 1cm 2) and place
them in a pot/bowl.
3. Add about two cups of boiling water to the pineapple pieces in the
pot/bowl.
4. Cut one of the remaining quarters into small pieces (about 1cm 2)
and leave them on the cutting surface.
Take a photo of this stage. (Photo 1)
5. With the measuring spoon, measure 20 ml of gelatine powder and
add it to the second pot.
6. Add 100 ml of boiling water to the gelatine powder. Stir until all the
gelatine powder has dissolved, then add 100 ml cold water and stir
again.
7. Using the marker pen, label your glasses A, B and C.
8. Using the syringe / larger measuring spoon, measure 20 ml of
gelatine solution into each of the glasses.
Take a photo of this stage. (Photo 2)
9. Carefully remove the pineapple pieces from the boiling water and
add them to glass A. Mix so that the pineapple is covered with
gelatine solution in the bottom of the glass.
10. Similarly, add the pineapple pieces from the cutting surface to glass
B.
11. Leave glass C as it is.
12. Place all three glasses in the ice tray.
13. Leave the glasses in the ice tray for at least 20 minutes.
14. Remove the glasses from the ice tray and make notes on the
appearance (colour and clarity) and degree of gelatinisation (how
much it has set). These notes will be important for answering
questions in the PAT on the 6 June 2024.
15. Take a photo of the three glasses together. (Photo 3)
16. Keep one of the remaining pineapple quarters in the fridge for the
PAT 06 June 2024. Remember to have it available with you on the
day.
