Why Buy Organic Coffee? Heavy Chemicals

Coffee is the heaviest chemically treated food commodity in the world. Types of common pesticides are DDT and malathion, which are manufactured in America but are illegal to use on our soil. In lower altitudes, BHT is commonly used on coffee crops applied through airplane dusting. The most common chemical used in coffee production is synthetic petroleum based fertilizers which slowly destroy the soils fertility and seep into local water supplies. Exposing coffee workers and their families to these harmful chemicals have caused birth defects and cancer. Scientists have found trace amounts of DDT that have made its way to the Antarctic. DDT is known to remain active for over 15,000 years before breaking down.

Deforestation
Original coffee trees do not grow in direct sunlight, but under the shade of dense rainforest. Scientists, in the name of progress, developed sun-resistant coffee tree hybrids that have come to comprise 70% of the worlds coffee production. Coffee farmers are clearing lush rainforest at alarming rates to make room for new, sun resistant coffee trees. The Smithsonian Migratory Bird Center estimates that over the last five years 150 species of song birds have been displaced or have gone extinct due to this deforestation.

Soil Erosion & Water Contamination

Short term thinking brings poor maintenance of the land that has caused severe soil erosion in coffee growing regions. Farmers using petroleum based synthetic fertilizers year after year on the same plot of land eventually find the soil exhausted and unable to grow anything. At processing plants, coffee cherries are de-pulped in aqueducts. The pulp is routinely dumped in local rivers. When coffee trees are treated with chemicals this all but destroys the water supply. Even in situations where chemicals are not usedthe organic debris can reek havoc on rivers. Imagine dumping ten thousand banana peals a day into the local water supplychemical or not it will contaminate the water.

Economic Oppression
Workers harvesting coffee for wealthy landlords on average make .25 cents per hour and slave 12 to 14 hours a day. These conditions are worse than the garment industry. Small land holders in high altitude locations fall prey to exploitive middlemen known in the industry as coyotes. Coyotes are international coffee buyers armed with cash penetrating the most remote farms and paying farmers only pennies for the finest coffees of the world. While coffee retailers, roasters and importers are getting richmany times the farmers and their families are starving .

Urths environmental, ethical and quality standards for coffee are still unmatched nationwide. Today, there are approximately 150 verified authentic organic coffee farms world wide. Out of 150 organic farms only 8 meet the rigid Urth Caffe standards.

Certified Organically Grown

All coffees must be certified to be organically grown by reputable third party inspectors. Certified organic for Urth Caff means grown 100% chemical free. Inspectors test soil, leaf and beans for chemical residue; they audit the shipping of the beans to prevent blending or spraying of beans; and they inspect the roasting facility. All Urth coffees are fully inspected, documented and certified annually.

Shade Grown & Bird Friendly

We do not buy from farmers that have deforested land. Our source farms are situated deep with in the dense shade of the rainforest. Only old, non-sun resistant coffee stock are used which are known to grow up to twenty feet tall. Shade grown coffee takes longer ripen creating sweeter and more aromatic coffee and leaves the fragile habitat of song birds and other jungle creatures intact.

Sustainable Agriculture
Sustainable agriculture is a holistic approach to farming utilizing natural methods to insure superior quality of coffee and to preserve the longevity of the soil. Composting is a key element to sustainable agriculture. The fruit, skins and all organic debris is recycled after processing to make rich, natural fertilizer for future crops. Cross cropping and intercropping of other kinds of commodities with in the coffee plantation plays a major role in protecting soil vitality and providing economic diversity for the growers. Many other innovative techniques are used by sustainable farmers for effective, natural pest control and for yielding healthier crops of coffee.

Urths Coffee Tips

Storing Fine Coffee
Keep coffee airtight, away from light, odors and moisture at room temperature. Coffee is like fresh produce, and stored under these ideal conditions should taste superb for 7-10 days, and O.K. for up to 1 month.

Brewing Methods
French press / Plunger pot
Rinse pot with warm water. Add coarsely ground coffee (two heaping tablespoons per 10 ounces of water). Bring fresh cold water to a boil and pour over coffee, stir vigorously. Let coffee steep for three minutes. Push the plunger down and serve. If the press is too difficult to plunge, the coffee is ground too fine.

Fresh Cold Water

Use cold, fresh filtered water or mineral water and avoid tap, softened, or distilled water. Water temperature is important also. The best temperature is between 195 and 205 degrees Fahrenheit. Do not allow water to over boil. Check automatic brewer occasionally. If it does not reach 195, you may experience bitter, watery coffee.

Drip Coffeemakers
Urth Caffes tip for preparing excellent drip coffee is using the finest grind possible for your drip method. For flat bottom automatic drip coffee makers, use an exceptionally fine grind. For Melitta or cone filter, use a fine grind (just slightly coarser than the flat bottom method). Gold or nylon filters will require an even coarser grind due to the small holes in the filter. We recommend experimenting with grind size and quantity to find the perfect balance for your coffee maker. If the grind is too fine, you may find coffee grinds or oily spots in your cup. If grind is to course, you may see the bottom of your cup.

Use The Correct Grind

Each brewing method requires its own grind. We recommend a little trial and error to find the perfect grind. Too fine a grind will cause over extraction and bitterness. Too coarse a grind will make watery coffee. Check the mills and blades of your grinder regularly. Every day use of coffee grinders will cause the mills or blades to dull. This will drastically affect the flavor of the coffee. It is necessary for the coffee to be ground uniformly in order to achieve the best flavor. Have grinder mills or blades sharpened or replaced every six months.

Espresso
With espresso, the grind is crucial. Using a fine grind, a one-ounce shot takes 15 to 20 seconds to brew. It should flow out of the port-a-filter like maple syrup and have a thick, dark reddish-brown crema. If the liquid flowing from the filter starts turning white, stop immediately. It means your coffee is burning. Properly made espresso is strong and smooth, yet never bitter, almost like fine liquor. If your espresso pours fast and watery, try grinding finer, adding more coffee or packing harder. If your espresso drips out too slowly, try grinding more coarsely, or using less coffee.

Measure Carefully
We recommend using two heaping tablespoons for each 10 oz. cup of water. Do not be afraid to try using less or more to achieve the flavor that suits your individual tastes.

Fresh Brew Tastes Better

Fresh coffee is better. Oxygen attacks hot coffee and causes its acids and oils to become bitter and stale in 20 minutes. An airtight thermos will keep the coffee hot for several hours, and preserve the flavor for at least 40 minutes.

Black tea is fermented and oxidized, giving the leaves a reddishbrown color. The form of the leaves may be in whole, unbroken leaves or tiny broken pieces. OOLONG TEAS
Oolong tea is between 10%-90% fermented. Oolongs have qualities of both green and black teas with an unique floral spiciness, and clear to amber-green liquor. Oolongs can be rebrewed repeatedly, (3-4 times), revealing subtle nuances and exquisite hidden flavors. Steep at 180 for 2-3 minutes.

How to make tea

The simple act of making a pot of tea is both, relaxing and economical (one pound of tea makes between 150 and 200 cups). 1. Place one heaping teaspoon of loose leaf tea per each ten ounces of water (add double the amount for herbal blends) in a warmed teapot. The best flavor results when the leaves have plenty of room to grow as they steep. 2. Bring cool, fresh, filtered or mineral water to the recommended temperature (see chart below). 3. Pour water over leaves. 4. Cover and steep for the appropriate amount of time. 5. Stir with spoon, remove tea leaves and then serve.

Tea brewing temperatures & times

Black tea: Bring water to a boil, remove immediately. Steep 3-4 minutes. Oolong tea: Allow water to achieve small beads of bubbles, approximately 185, and remove. Steep 2-3 minutes. Green tea: Remove water when it starts to steam, approximately 170. Steep 1minute. Herbal tea: Bring water to a boil, remove immediately. Steep 3-4 minutes or until the tea liquor is the color of the herbs in the blend. Iced tea: Add 6 heaping teaspoons of tea to a large pot. Steep for 10 minutes to form a concentrate. Pour tea concentrate into a pitcher and add an equal amount of room temperature water. Chill.

Proper Storage
Tea can last for one year or more, but fine teas that have multifaceted flavors and aromas lose their complexity in less than six months. So, buy tea fresh and in small quantities. Exposure to air, light, moisture, heat, and odors, rob tea of its flavor. Store the tea in a clean, airtight container away from heat, but not refrigerated.
