Tom’s vineyard is staked and the vines will soon go in – not the
typical Cab and Chardonnay but Rhône varieties such as Mourvedre,
Viognier and two or three clones of Grenache, as well as a Bordeaux
known as Alicante Bouchet, since Tom’s specialty is unique blends.
Tom believes the location of the villa in the heart of the Paso wine
country is ideal. “We’re jut 10 minutes from the restaurants, shops
and tasting rooms in Paso Robles, and only 45 minutes or so from
Cambria, the Hearst Castle and San Simeon. Guests can also take

“After a day of wine tasting and seeing the local sights – perhaps
picking up gems on Moonstone Beach and viewing the antics of the

including onsite organic lavender oil distillation and a glass blowing
demonstration. Admission to the festival is a suggested $5 donation

Sunday’s activities begin at 10 am with a “Green Eggs & Ham”
brunch created by Chef Jeffrey Scott; prices are $5 for kids, $10 for
adults. Professional storyteller Steve Crouch will be entertaining
children and parents alike with his Native American influenced

Last year’s event raised over $6000 for the Make a Wish Founda-
tion, and we are hoping to exceed that this year to support both
KCBX public radio and The Boys & Girls Club of Paso Robles.

As Harold was busy making wine around
the world, Dick Kelsey was building a barn to

“The key is immediate drinkability,” Harold explains. “Wine should
be fruit oriented, with balanced tannin, alcohol and acidity levels from
start to finish. A wine can be great in two years; it doesn’t have to be
a 20-year wine to be a great wine. Then you have to hope and wait to
see if it will be good. Who wants to wait that long?”
And so Harold and Dick focus on making wines as inviting as their
locale, having as much fun as possible along the way. “It’s about a good
experience,” says Dick. “We enjoy every day of this experience, in the
winery and in the tasting room. The older I get, the more I believe in
fate. A lot of things had to line up in my life for me to be able to do
this. And for that, I am grateful.”

at Eberle Winery
Eberle Winery of Paso Robles announced the line-up of their one-
of-a-kind Guest Chef Dinner Series, which takes place each month in
the Eberle wine caves and features chefs from across the U.S.A. While
this year has already included top chefs such as Douglas Dodd of the
Hotel Bel-Air and the favorite chef of Ellen DeGeneres, Leonardo
Curti of Trattoria Grappolo in Santa Ynez, the rest of the year’s chefs
should help create one for the record books for Eberle Winery.

Tom sprayed the interior walls with a protective coating to help
keep it cool inside and set up a functional, if modest, tasting area.
The wood bar is all hand made, worn and full of character.
In addition to the wines, Tom produces olive oil from trees on
his 63-acre property. He just likes the challenge of something new.
Rio Seco is a hands-on winery with Tom and Carol doing just
about everything themselves. That includes Tom learning the art of
winemaking. “Do I have formal training? No,” Tom grins. “Hours
on the crush pad? Yes!” Tom’s a believer that you learn by doing,
something he picked up at college at Cal Poly Pomona. “Making
wine isn’t rocket science,” Tom says. Plus there’s the advantage of
having a supportive winemaking community near him. And
perhaps the toughest part of making wine? “You ruin a lot of
clothes,” he says.
The wines run the gamut from a light Roussanne to a hefty
white blend called VIO RIO, a blend of Orange Muscat and Viog-
nier, which the Hinkles affectionately call “mama’s moonshine”
